Made 3 large bags of home kill mince into these patties at the weekend, hubby took them round to his Bowling club for their BBQ and they went down a treat, thank goodness i made heaps, had to mix them in a bucket lol. Nearly everyone that had them came back for seconds, they served them with spuds, salads, and sausages.. A few that were left soon got nibbled up cold, i was wrapped so thanks Fisher they were a winner...

hi, i plan on making these this arvo, i really want them to impress, sooo how much mince should i buy, how much of the sauces should i use, and would mixed herbs be ok instead of oregano, and finally instead of parsley could i use a cougette or carrot grated would that make the same consistency??

RISSOLES/MEATBALLS

1 Large onion chopped and cooked in a little butter in the microwave
add that to a large mixing bowl
1 teaspoon of crushed garlic
1 teaspoon of fresh ginger
1 tablespoon of HP sauce or tomato sauce
good dash of worcestershire sauce
good dash of soya sauce
1 teaspoon dry mustard powder
1 tbsp baking powder (this stops the mixture breaking up)
also I add a small spoon full of made mustard I use Coleman Hot English plus beef stock powder and any other you might like to add for flavour
1 tablespoons of brown sugar
1/2 -3/4 cup breadcrumbs
1 egg
500 grms of mince

Mix well and place in plastic bag in fridge overnight for all flavours to mix. Shape into patties/balls with wet hands and fry.

I made some yesterday, family loved them.
Ikg mince, large finely chopped onion, 2 eggs, tblsp rolled oats, sprinkle chicken stock, shake of tuscany herbs and thai seasoning, slosh of worster and soy sauce, tblsp relish or sauce, actually forgot the S and P and no garlic this time.I just throw in whatever is the pantry in the way of herbs, try and stay away from too much thyme or x herbs.
Then I mix it all up with my hands and make the patties, not too big and pop them away in the fridge for at least 8 hours, covered.
Anyway they were yummy and everyone 10 of us ate the lot.
So really their is no secret to patties, really it's just what you create.
Doesn't have to be top grade mince either, what the heck!!! I also threw in a teaspoon of mild curry powder, next time abit more.

Is this what you want?

Mince Rissoles The baking powder helps hold their shape
Thaw you minced beef by placing in fridge overnight. Break up finely into a bowl.
Dice two med onions and place one in the mince and fry the other in a little oil till near burnt. Add cooked onion to mince.
Now add to the mince 2 cloves of crushed garlic, splash of soy sauce, tomato sauce and worcestershire sauce.
2 tsp chopped fresh oregano 1 egg, lightly beaten 1/4 cup chopped fresh parsley 11/2 cups fresh breadcrumbs 1 tsp baking powder.
Method:
Mix together well using your hands Season to taste with salt and freshly ground black pepper
Form the mince mixture into round patties about 15mm thick.
Place the patties on the BBQ and cook for 5 minutes on each side, or slow cook in frypan on stove top using med heat until golden brown.
Drain on paper towels and serve.

Is that 1 and 1/2 cups of fresh bread crumbs?

Sorry to hear fisher has passed away, R.I.P fisher you were a inspiration and helped a lot of people, many years ago. despite what some are saying about you now.
Hello Uli, good to see you back on here to.

Sorry to burst the bubble about how truthful fisher was. He wasn't anything he purported to be in this forum. He was not a professional cook, his mother certainly wasn't either. How do I know this? I was married to him for 14yrs back in the 70's and we have a daughter together. I watched him write a load of rubbish here on this forum over the years but said nothing as I have a wonderful life and did not need to appear vengeful. But pixie1955 is correct. He appropriated recipes and took credit for them when they were indeed not his own.

This doesn't surprise me I always thought there wasn't much consistency or pattern to recipes posted.

Most people who cook or bake have an MO

I don't think many people took him seriously; I assumed he was suffering from some kind of mental illness, maybe mild dementia or bipolar disorder. His ideas about food were largely boastful nonsense.

whoa, nasty much???, coming from someone who regularly copies recipes from this forum. I have never read something so stupidly obtuse. Maybe your MB ChB lends yourself to online diagnosis, but mine does not.

Wrong. You are very mistaken if you think that any recipe davidt4 has posted in here (other than if she has copied a recipe that someone has specificially asked for and then it is attributed to the original poster) is anything other than originally hers and, if I may say so, been cooked by her so she knows if it works or not.

Maybe you are confusing her with another poster, long gone now, who used to copy untried recipes from Annabel Langbein or similar cookbooks while calling them family heirlooms.

I'll second that.
davidt4 always gives the source, if it's not her own original recipe.

No, I meant I regularly copy recipes from this forum for my own use, I feel its in very poor form to offer a opinion on the mental state or a informal flyaway diagnosis on someone who has passed away.

Sorry to hear that.
I only met him twice and then he re-located North.

I was however a bit stunned about his recipe collection on his private website. For a normal everyday cook which harvests stuff from the garden and adapts and invents recipes they were not especially exciting or new at all. I never checked out sources, just found the recipes not worth cooking.

RIP fisher - all the best for next time :)
