wow who wouldn't like that - best food mayo makes everything taste good! All i can offer is adding some spring onion, taking out the kumera and adding mint and hardboiled eggs !

Mine of course :)

German type potato salad made from small waxy type potatoes, steamed, peeled and sliced finely then tossed with hot stock and let steep in it so the spuds soak up the stock, after 15 minutes add oil, vinegar, mustard, salt and pepper and chopped onions. Let sit for about 30 minutes to an hour and serve.

You can vary the original by adding thinly sliced cucumber, some Northern German people use gherkins instead (most likely they didn't have cucumber up there for very long in the season). Some more eastern people use fried bacon in the salad ... and some others add chopped boiled eggs.

My own - slightly warm potatoes still in their skins with caramelised red onion, sundried tomato, crispy bacon, anchovies, balsamic vinegar and extra virgin olive oil ... I don't like potato salads made with mayo or similar type dressings.

I agree with the mint & guys usually love eggs in salads!

Not all that quick to make but worth the effort, sorry about the capitals but that is how I have it saved.
Potato Salad
3 LARGISH NEW POTATOES
3 BOILED EGGS
1 SMALL ONION FINELY CHOPPED
2TBLSP PARSLEY CHOPPED
½ tsp SALT
PEPPER
PAPRIKA
COOK SCRUBBED POTATOES UNTIL JUST TENDER, DRAIN AND COOL, CUT INTO CUBES, PLACE IN BOWL AND ADD TWO OF THE HARD BOILED EGGS CHOPPED, THE ONION AND HALF THE PARSLEY, SALT AND PEPPER.

DRESSING:
¼ CUP SUGAR
2 tsp CORNFLOUR
½ tsp PREPARED MUSTARD
¼ tsp SALT
1/3 CUP WATER
2 TBLSP WHITE VINEGAR
1 EGG LIGHTLY BEATEN
½ CUP MAYONNAISE
COMBINE SUGAR, CORNFLOUR, MUSTARD, SALT, WATER, VINEGAR AND EGG IN POT, COOK STIRRING UNTIL THICK AND BUBBLY, POUR INTO BOWL AND COVER WITH GLADWRAP AND COOL. STIR MAYONNAISE INTO COOLED MIXTURE AND CHILL
ADD THE DRESSING MIXTURE TO THE POTATO EGG MIX AND GENTLY TOSS. MINCE THE ONE REMAINING BOILED EGG AND MIX WITH PARSLEY AND SPRINKLE ON TOP OF SALAD, SPRINKLY WITH PAPRIKA. CHILL AND SERVE

Baby potatoes steamed till tender then chopped lightly, spring onions, parsley (all from the garden) and then homemade mayo stirred through while its still quite warm (but not hot) and then served at room temperature. Yum. Can't wait till my potatoes are ready.

I like to dress mine similar to ....wheelz....cook potatoes, dice them, chopped onion, gherkins, chili, salt pepper.. Chill, loosen with milk if need be, or the liquid from the gherkins.

I use canned potatoes. Already cooked, peeled, uniform, cold, convenient, delicious, waxy, consistent and great for photo shoots. :-)

Hubby worked with a German woman... Gerkins are her secret... I turned into a potato salad lover, thanks to gabi...

Also, mix the mayo with some milk...to thin it down... I don't like the mayo too thick

I mix the mayo (if I use it) with vinegar :)

It's good to see some potato salad recipes that aren't just potatos in mayo! I will be referring to this thread when the weather warms up a bit and it's barbecue season again :-)

I always add stuff to the mayonnaise, such as sour cream, herbs, mustard and lemon juice.
Boiled eggs, remove the cooked yolk and mash into the dressing

my boys love potato, spring onion, bacon, cheese, eggs, dressing of best foods mayo/sour creme/whole grain mustard or the good old eta potato salad dressing

Uli won't be back so you'll have to wing it. But I doubt that Uli actually uses measurements. She would just know, from experience, how much stock to use. As you say, it does sound quite delicious.

I nuke potatos (2 potatos per person) for 10 mins in the microwave, in a bowl I add a teaspoon of hot mustard, 2 squirts of honey mustard, 2 dollops of grained mustard, a teaspoon of mayo or sour cream, 2 shakes of dried basil and 2 shakes of chives. Mix all together and add to hot chopped potato.. never lasts in this household

Oooh, that sounds delicious and I definitely want to try it! Althought 10 minutes in the microwave sounds far too long, unless your potatoes are really massive. I usually ding mine for about four or five minutes if I'm going to mash them through the ricer.

My dutch friend makes an amazing potato salad where the potatoes are roughly mashed with tinned corned beef, mayo,small silver picked onions cut up plus a bit of the pickling vinegar with gerkins and boiled eggs sliced on top. Every single person that I know (except the vegetarians ) love it!

I make something quite similar to uli's potato salad, but instead of stock I bathe the cooked potatoes in white wine while they are hot. You don't need much stock or wine, maybe half a cup, and turn them over in the liquid from time to time until they are cool. Drain them before dressing. The potatoes absorb the liquid and gain flavour, also they do not take up so much vinaigrette or mayonnaise.

i cut up potatoes into cubes, mix half mayo half cream with chopped up mint or parsley, finely chopped onion or spring onion, and some bacon if you fancy. Hmmm SO good and tastes even better the next day

Canned potatoes are lovely and taste just like fresh spuds. If you have not had them then dont comment till you have. The make an awesome salad and are very reasonable to buy like this. You will always have a salad on hand as long as you have a tin of these in your pantry. Yummmmmmmm.

I used to make a greek style potato salad. The dressing was olive oil, lemon juice, garlic and mint (no mayo). Add it while the potatoes are warm so it soaks in. You could include spring onions etc.

This is nice as well

Pesto Potato Salad

700g baby new potatoes, halved (or Waxy Potatoes boiled and cubed - not quite as fancy though - but still yummy)
1/2 cup sour cream
2 tbs whole egg mayonnaise
2 tbs Basil Pesto
2 tbs chopped fresh chives ( I don't bother)
Salt and pepper, to taste
Method

1. To make the pesto potato salad, cook potatoes in a large pan of boiling salted water until tender. Drain well. Meanwhile, combine sour cream, mayonnaise, pesto and chives in a large bowl. Add hot potatoes and season with salt and pepper. Toss gently to combine.

A good topping of crispy Bacon is nice
