Whats your Favourite Meatloaf Recipes?

I made a Venison Meatloaf tonight. So lovely.
I want to make others, but my family are stuck on this one.
Any ideas?

i dont have amounts sorry, but beef mince mix in finely chopped onion and pepper and a bit of garlic, grated carrot, add some worchestire and tomatoe sauce, pepper, 1 egg and 1/4 cup or so of breadcrumbs, mix and bake, 20mins from taking out of ove3n top with a mix of worchestire, tomatoe sauce and golden syryp.........yum

Bacon Wrapped Pork Meatloaf

750g pork mince (I used slightly less mince, added grated carrot & courgette)
1 medium brown onion, grated
2 cloves garlic, crushed
200g button mushrooms, finely chopped (am the only mushroom fan here, so just used about a handful)
1T finely chopped thyme (I used about 1t dried)
1/2 c finely chopped flat-leaf parsley (I just chucked in a couple of spoons dried)
2 eggs, lightly beaten
1/2 c soft fresh breadcrumbs
1 1/2 T hot chilli sauce (I used mild chilli - not hot food fans)
1 1/2 T dijon mustard
2/3c smoky BBQ sauce
8 thin bacon rashers, rind removed

Preheat oven to 200deg c/180deg fan forced. Line a baking tray with paper, then place a wire rack in tray.

Place mince, onion, garlic, mushroom, thyme, parsley, egg, breadcrumbs, chilli sauce, mustard and 1/2c of the BBQ sauce in a large bowl. Using hands (I used the mixer!), mix ingredients well.

Arrange bacon rashers on a copping board, overlapping slightly. Place mince mixture across centre of bacon rashers. Using wet hands, pat mince mixture into a loaf shape. Bring bacon slices over sides to meet. Turn meatloaf over and place on wire rack. Bake for 40 minutes.

Remove meatloaf from oven, brush with remaining BBQ sauce. Bake for 10 minutes more or until firm & cooked. Serve with salad.

Barbeque Glaze Meatloaf

500g bacon slices trimmed, 1 onion chopped, 750g beef mince, 250g sausage meat, 1 cup fresh breadcrumbs, 1/2 cup chopped parsley, 2 teaspoons rosemary leaves, 1 tablespoon worcestershire sauce, sea salt and cracked pepper add garlic if you like.
***BARBEQUE GLAZE***

1/3 cup tomato sauce 2 tablespoons brown sugar 2 tablespoons red wine vinega
r... Preheat oven to 180c. To make the barbeque glaze, place the sauce, sugar and vinegar in a small saucepan over low heat and stir until sugar dissolved. Brush the glaze over both sides of bacon, reserving any glaze. Line a 20x10x7cm greased loaf tin with the bacon slices. Place the onion, garlic, beef mince, sausage meat, breadcrumbs, parsley, rosemary, worcestershire sauce, salt and pepper in a bowl and mix well to combine. Press the mince mixture into the loaf tin, fold over the bacon to enclose the filling and cook for 35 mins or until cooked through. Carefully drain any excess liquid from the tin and turn the meatloaf out on to a baking tray. Brush the loaf with the remaining glaze and cook for a further 8-10mins or until the top is golden. Slice to serve. serves 8.

rolled meat loaf

500g mince 1 egg 1 teaspoon soy sauce 1/2 cup fresh breadcrumbs OR 1/2 cup rolled oats 1/2 teaspoon mixed herbs 1 small onion finely chopped FILLING 2 boiled eggs 3/4 cup grated cheese TOPPING 1/2 cup tomato sauce 1/4 cup brown sugar 1 tablespoon vinegar 1. In a large bowl beat egg and add rest of ingredients. 2. Mix thoroughly, (your hand is a good tool here). 3. Spread out a sheet of greasproof paper about 30cm x 20cm and smooth out meat mixture to fit. 4. Cut eggs in quarters longways and put in a line across long side of meat nearest you, 5. Scatter cheese over. 6. Using paper to help you, roll up meat like a sponge roll, place on a baking dish with sides seam side down. 7. Mix topping ingredients and cover loaf. 8. Bake for about 1 hour at 180º.

Combine 500g minced beef, 500g sausage meat, 1 cup breadcrumbs, 2 finely chopped onions, 2 teaspoons curry powder, 1 tablespoon chopped parsley, 1 egg, 1/2 cup milk, 1/2 cup water and salt & pepper to taste. Mush together with hands and shape into a loaf. Bake in moderate oven (180) for 1/2 hour. Drain off any fat. Pour over BBQ sauce, cover and bake 45 minutes basting the loaf with the sauce 2-3 times. To make sauce combine 1/2 cup water, 1/2 cup tomato sauce, 1/4 cup Worcestershire sauce, 2 tablespoons malt vinegar, 1/2 cup brown sugar, 1 teaspoon instant coffee powder, 30g butter & 2 tablespoons lemon juice - all in a pot and bring to boil stirring constantly.

Another vote for this one - I found it on a slip of paper inside my worn out old cookbook last week and promptly made it again. Some of my kids aren't big on the tomato topping though, so I left the top of the meatloaf plain and heated the remainder of the can for those who appreciate it to spoon on top once sliced ..... delicious!

Meat Loaf (Microwave)
500 gm mince meat
½ cup rolled oats
1 egg lightly beaten
2 Tbsp tomato sauce
1 small onion
salt/pepper
1 dsp worcester sauce
1 tsp beef Maggi stock

Combine all ingredients and place in loaf pan. (I use a ring pan.)

Optional Tomato Sauce

1 Tbsp tomato paste (I use tomato sauce and sometimes sweet chilli sauce)
1 dsp dark soy sauce
½ tsp curry powder
1 Tbsp honey

Combine all ingredients and pour on top of meat loaf before cooking.
Cover and cook 8 mins on High. (Mine takes more like 10 mins, but it is a slower oven.)

You can serve it hot, but nice cold too.

I'm a sucker for a sausage meatloaf; and I find the sausage meat tubes from the supermarket too high in salt, fat and lacks flavour.

Last week I grabbed a pkt of Hellers Pure Pork; Angus Beef and Tomato and Basil sausages. Slit the skins under cold running water and they peel off with ease. Added the usual seasonings, vegetables etc, smothered the top in HP sauce and baked.
Wow! Pretty cool having three flavours of meatloaf.

Thats a good idea shopaholic, for when I cant find the packet sausage meat :) I always put pineapple on the bottom - when you take it out, it is on the top :) and with the watties sauce too.

Here's more Meatloaf - rock on

Try this one skata, our favourite!
Cajan meatloaf
• 2 Whole bay leaves
• 1 T salt
• 1 t cayenne pepper
• 1 t black pepper
• 1/2 t ground cumin
• 1/2 t ground nutmeg
• 4 T butter
• 1 C finely chopped onion
• 1/2 C f celery finely chopped
• 1/2 C finely chopped bell pepper
• 1/4 C chopped spring onions
• 2 t of minced garlic
• 1 T tabasco sauce
• 1 T worcestershire sauce
• 1/2 C milk
• ½ C tomato sauce
• 2 packets sausage meat
• 2 eggs lighthy beaten
• 1 cup very fine dry bread crumbs

Cooking Instructions
Combine bay leaves, salt, cayenne, black pepper, cumin and nutmeg in small bowl and set aside. Melt butter in pan and add onions, celery, bell pepper, spring onions and garlic and cook until soft. Add Tabasco, Worcestershire and seasoning mix, cook a further 2 minutes then add milk and tomato sauce and cook for another 2 minutes then remove from heat. Put sausage meat in large bowl and add eggs,breadcrumbs and cooked spice/vege mixture. Place into greased loaf tin and cook for 1hr at 180 C. Serve warm or cold with a green salad.

i did an easy one the other nite everyone loved it

i egg

grated cheese and slice tomatoe on top

mix all together place in dish i just used a cassarole dish as sisnt have a loaf tin cooked at 180 C for 1 to 2 hours i just kept checking it not really sure how long it was in the oven for
was yummy hot and hubby had in sandwhiches for work cold said it was still yummy
the chilli sauce just gives it a bit of zing

Thank you, they both sound very tasty. Might have to leave out the tabasco/chilli sauce though due to fussy teen.

Used to make one years ago with a mixture of grated carrot, thyme and grated onion... rolled into sausage meat, whatever you prefer the skinned prepared ones or generic packs from the SM... Baste with dilluted beef stock while cooking...

Yup, same here, I double the receipe and freeze them, make about 4 out of the mix, I found that by blending the mince + sausage meat together made it really nice, did not use the bread, but seasoned breadcrumbs. Real favorite here with us.

COTTAGE CHEESE MEAT LOAF
500g lean mince
1 tbsp prepared mild mustard
½ cup rolled oats
¼ cup tomato sauce
¾ tsp salt
¼ tsp pepper
1 egg, lightly beaten
2 tbsp finely chopped or grated onion
1 cup (1 x 250g pottle) cottage cheese
¼ cup parmesan cheese

Combine all the ingredients, except the parmesan cheese, then press the mixture into a greased 23cm x 15cm loaf tin.
Bake at 180°C for 1 hour.
Remove from the oven and top with the parmesan cheese.
Return to the oven for 10 minutes, then remove from the oven again and allow to stand for about 5 minutes - for ease of cutting. Serve hot or cold. :-))

I just use mince and veges (grated), some tomato sauce and lots of herbs and spices.
Fill in dish and bake. Serve with more tomato sauce and lots of green salad.

SUPREME MEATLOAF

1 KG Finely ground beef (mince)

1 Cup fresh breadcrumbs

1 teaspoon crushed garlic

2 tablespoons chopped parsley

1/2 teaspoon paprika

1/2 teaspoon basil

1/2 teaspoon oregano

1 onion finely chopped

2 eggs

3/4 cup beef stock of consomme

1/4 cup red wine

2 tablespoons tomato paste

2 teaspoons prepared mustard

1 tablespoon worcestershire sauce

salt & pepper

In a bowl combine beef, breadcrumbs, basil, paprika, oregano, garlic parsley and onion. Mix well.

Beat eggs until light and then add to the mixture with the stock and wine. Mix well.

Stir in the tomato paste, mustard, worcestershire sauce, salt and pepper. Beat with an electric beater for a lighter meat loaf.

Pack mixture into a well greased loaf pan and bake at 180 degrees C 350 degrees F) for 60-70 minutes.

Remove from oven and spoon off excess juices.

Serve hot or cold.

MEAT LOAF WITH APRICOT SAUCE

1 Large onion chopped and cooked in a little butter in the microwave

add that to a large mixing bowl

1 teaspoon of crushed garlic

1 teaspoon of fresh ginger

1 tablespoon of HP sauce or tomato sauce

good dash of worchester sauce

good dash of soya sauce

1 teaspoon dry mustard powder

also I add a small spoon full of made mustard I use Coleman Hot English plus beef stock powder and any other you might like to add for flavour

2 tablespoons of brown sugar

2 slices of bread cubed

2 eggs

1 kg of mince

1 pkt Maggi Mushroom Soup

1/2 cup milk

1/2 cup chopped parsley

Mix all this together with your hands.......I use disposable gloves and then you have no smell left on your hands

Mould into a loaf shape and place in a baking dish and baste with sauce every 15 mins
Cook 1 hour at 180 C

Apricot Sauce

450 grm tin of apricots

1/4 cup malt vinegar

2 tbsp brown sugar

Whizz apricots till pulp and add ingredients. Microwave for 2 mins to mix.....

The best meatloaf is the one in Alison Holsts' books. She called it an american meatloaf.

Here is my favourite:
Meatloaf:
500gm mince
500gm sausage meat
1 cup breadcrumbs
1 tbsp chopped parsley
2 chopped onions
1 egg
Salt & pepper
1 dessertspoon curry powder
1/2 cup milk
1/2 cup water
Combine all together, and put into loaf tin.
Sauce:
1/2 cup water
1/4 cup worchester sauce
2 tbsp vinegar
1/2 cup tomato sauce
1/4 cup brown sugar
1 tsp instant coffee
25gm butter
2 tbsp lemon juice
Combine in a pot. Simmer for 5 mins. Pour over meatloaf.
Bake at 180°C for approximately 1+1/2hrs. Spoon sauce over, several times during cooking .

For variety, put 1/2 mixture in tin, make a indent, lengthwise in meat, put peeled, boiled eggs, in a row down the line......or blue cheese & parsley, press the rest of mixture on top, then bake.

Used to make this a lot when we ate meatloaf... was good for a family.

500g - 800g of good quality sausage meat.

Grate a carrot... add dried thyme + salt and pepper
Then add some tomatoe sauce (2 tbs is enough) + diced onion.
Mix together.. it should not be too sloppy

Pat sausage meat out into rectangle and add the mixture leaving an edge...
if you put it on baking paper it helps when you roll it up.
Tuck the ends in and roll up lengthways.

Place in a slighly greased dish.

Make up a light beef stock with water ... to around 500ml.... (I think the original recipe used marmite) ... cook in oven for 30 minutes basting with liquid occasionally... then another 15 - 20 minutes.... cool slightly and slice.

I just put a meatloaf in the oven, I winged it and just remembered about this page...ooops forgot bread crumbs but picked up a good hint about basting it while cooking, I remember years ago I used to use marmite dissolved in boiling water. I used the usual stuff, 2 x sausagemeat, maybe 500gram beef mince, soya sauce, BBQ sauce, mild chilli sauce, garlic & herb salt, 2 eggs, and 1 packet onion & bacon mix as I love those they add so much flavour to everything. In one tin I sprinkled brown sugar & BBQ sauce the other is plain.
