Ingredients
• 1 cup unsweetened apple purée/sauce
• 1/3 cup cocoa
• 3/4 cup self-raising flour
• 1/2 teaspoon baking soda
• 1/2 cup sugar
• 1/2 teaspoon salt
• 1/2 cup dark chocolate chips
• 3/4 cup (70g) walnuts, chopped
Preheat the oven to 175°C and lightly spray or oil a 20x20cm baking dish.

Place apple purée in a medium-sized bowl. Sift in the cocoa, flour and baking soda. Add the sugar and salt and mix until just combined. Do not over-mix as this will toughen the brownies. Gently fold in the chocolate chips and the walnuts. Transfer to the prepared baking dish and bake for around 25-30 minutes or until the centre feels set and fudgy when a skewer is inserted.

Cool in the pan for 5-10 minutes before turning out. Cool completely before slicing into squares. If desired, dust with sifted icing sugar before serving.

I omit the walnuts -as i dont like them...this brownie recipe is devine...rich and wonderful...i sometimes stew up apples and puree in blender and once even didnt have enough apple puree and pureed some tinned pineapple...i also for emergencies buy the medium tin of Pams pureed apples...it is pure apples and just the right size tin for this recipe.

Are they really that good? I tried a mouthful of one from a cafe in the Coromandel and it was awful. Didn't taste anything like a really good chocolate brownie is supposed to taste, more like a doughy cake. Perhaps they made it incorrectly. What do you think? Bad cooking?

so many choc brownies so little time

bev00 - 2012-02-20 23:39:00

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 60 minutesIngredients:
•8- 1 ounce squares of unsweetened chocolate
•1 cup butter
•5 eggs
•3 cups sugar
•1 tablespoon vanilla
•1-1/2 cups flour
•1 teaspoon salt
•2-1/2 cups chopped pecans or walnuts, toasted
Preparation:
Preheat oven to 375 degrees F. Grease a 9 x 13 pan.
Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed. Stir in the nuts. Pour into prepared pan.

Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.

** It's not required, but this is when it's very nice to own a stand mixer.

This is one of the best brownie recipes.

200g butter
150g unsweetened chocolate
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
4 eggs
2 cups sugar
1 teaspoon vanilla
1 cup chopped walnuts, if desired

Preheat oven to 180 degrees Celsius.

Melt butter and chocolate in a pan over low heat. Remove from heat and cool slightly. While chocolate is cooling, mix together the sifted flour, baking powder and salt in a bowl.

In another bowl, beat together the 4 eggs. Beating steadily and briskly, ideally with a whisk, add the eggs 1/4 cup at a time (or in four steps) to the cooled chocolate mixture, beating each time until well combined.

With a spoon or spatula, stir in sugar and vanilla, then add dry ingredients, mixing until well combined. Add walnuts, if desired.

Scrape batter into ungreased pan of approximately 22cm by 33cm. Bake for 15 to 20 minutes. Do not overbake. Cool completely on wire rack before slicing.

Annabel Langbein's one is quite good, I made it on weekend, it has approx 300g soaked dates in it and 250g choc cut into chunks or chips and I think the trick is not to overcook it. It is very chocolatey and moist because of the dates. I used a whole bar of Whitakkers 72% in it so not for the faint hearted, plus it has a cup of cocoa powder in it too.

Pandoro's Chocolate Brownie Recipe.

This is absolutely divine, I sometimes top with ganache for special occasions.

100 grams cocoa
200 grams butter
400 grams sugar (this is not a misprint!)
4 eggs
1 tsp vanilla
1 tsp baking powder
200 grams chocolate, chips, buttons, chunks whatever you like

Sift cocoa, add melted butter, sugar, eggs, vanilla & mix to a smooth paste. Sift in flour & baking powder, then add chocolate. Pour into a lined 20 x 30 cm tin and bake in a pre-heated 150 C oven for 65 minutes.

Yes, I use this one too.
Keeps for at least two weeks.

as simple as using a rich devils chocolate cake mix pack, pour into lined baking tin or ceramic tray swirl in a block of melted chocolate (use white for contrast) or tin caramel sauce, dot in and press some macadamia nuts and broken chocolate pieces to cover, underbake until just right. Serve hot with very good vanilla icecream, or cool, dust and serve with chantilly creme or cream custard
