Almonds. Recipes in baking please:)

I don't mind ground, whole, chopped or paste. I would love more recipes please:)

Your tried and true:)

I have the strudel one (dutch) which I will make but would others:)

ps I think its cheaper or the same to buy them blanched then whiz them in the blender, then they are fresher!!

Makes
45 biscuits (Haven't tried any of these recipies)

Ingredients
300g (2 cups) plain flour
40g (1/4 cup) icing sugar
50g (1/2 cup) ground almonds
225g chilled unsalted butter, cubed
1 egg yolk
1/2 teaspoon vanilla essence
Icing sugar, to decorate

Method
Preheat oven to 180°C

Place plain flour, icing sugar, ground almonds and butter in the bowl of a food processor and process to combine. Add egg yolk and vanilla essence, and process until all ingredients just form a ball. Cover with plastic wrap and refrigerate for 30 minutes.

Divide dough into 4 equal portions. Roll out one portion between two pieces of baking paper to about 8mm thick. Cut into desired shapes (such as starfish or stars) and place on an oven tray. Repeat with remaining dough portions. Bake in preheated oven for 10-15 minutes or until beginning to colour and cooked through. You may have to cook them in 2 separate batches. Cool on a wire rack and sprinkle with icing sugar.

Almond Biscuits (Aunt Daisy)
8oz butter
8oz sugar
1 egg
3/4lb flour
1tsp b/powder
1tsp almond essence
Cream butter & sugar, add egg then dry ingredients etc. Roll into sm balls, dip tops in sugar & put an almond on top
Bake moderate oven 15 - 20 mins. Leave room for spreading

Almond Fingers (my mother used to make these - yummy)
Sift 125gr flour, 1/4tsp b/powder & pinch of salt
Rub in 50gr butter
Add 125gr sugar & 30gr ground almonds & mix with beaten egg yolk to stiff paste
Roll out oblong on a floured board
Beat egg white & add 50gr icing sugar
Spread over mixture & sprinkle on 25gr chopped almonds
Cut into fingers & bake on a greased tray, mod oven 10 -15 mins.

Bitter Cookies
1 C Almond Paste
3/4 C Castor Sugar
Dash Salt
3 Egg Whites beaten stiff at room temp.

Mix almond paste, salt and castor sugar well.
Fold in egg whites.
Drop onto greased tray.
Bake 180 for 25 mins or till golden brown.

Wholemeal Honey and Almond Cake

300g Butter
250g Caster sugar
4 Eggs
1 tspn Van Ess
150g Wholemeal Flour
2 tspn BP
150g Ground Almonds
50g Flaked Almonds
4 Tbspn Melted Honey

Cream butter and sugar.
Add eggs 1 at a time and beat well. Add van ess and beat in well.
Stir in ground almonds.
Stir in flour and BP gently.
Pour into lined baking dish.
Spread flaked almonds on top.

Bake 40 - 45 mins 160

Remove from oven and pour melted honey over evenly.
Cool in tin.

jamie.s greek cake 250 grm yogurt 250 grm caster sugar 75 grm ground almonds 5 eggs zest of a lemon 150 grm plain flour 1 tsp bp 200 grm semallina 1/2 cup olive oil
beat altogether bake 150 about 30 to 40 min turn out of tin and prick and pour the juice of lemon over

Mocha Cake
200g Butter
1 C Castor Sugar
4 Eggs
1 1/2 C Flour
1/4 C Ground Almond
1/2 tspn BP
2 tspn Lemon Zest

Cream butter and sugar.
Add 1 at a time and beat well after each addition.
Mix in rest and mix.

Bake in lined tin.

180 for 50 - 60 mins.

Ice with coffee or butter icing when cold.

Mediterranean Orange Cake (2 days)
23cm tin

3 oranges – cut off tops and bottoms, simmer 2 hours, drain, puree. Cover and chill several hours or overnight
15g baking powder
310g ground almonds
8 eggs
310g caster sugar
flaked almonds

Grease and line tin. Heat oven to 170 C.
Mix baking powder & almonds together.
Mix eggs & sugar together until just combined. Do not beat.
Measure 375g of orange puree, add to eggs along with almond mixture.
Mix gently until well combined. Pour into tin and scatter with flaked almonds.
Bake 70 - 80 min. Cool overnight in tin.

ALMOND AND LEMON CAKE
 
4 eggs, separated
155g caster sugar
Finely chopped zest of one lemon
50g flour
150g ground almonds
3 T finely diced crystallised lemon or 2 T candied peel
Icing sugar to dust
 
 Preheat oven to 180c. Butter and line with baking paper cake tin

Beat egg yolks, sugar, and zest until thick and creamy

Stir in flour almonds and peel

Beat egg whites until stiff and fold in to other mixture.

Pour into tin and place in oven for 30 mins or until cooked

Remove from oven and cool before removing from tin – dust with icing sugar.

Almond Cake 

(serves 10 - 12

)

100g sr flour

300g whole almonds with skin

10 eggs, separated

300g caster sugar

zest one lemon

1/2 tsp baking powder


cream to serve



Heat oven 160C.   Line 30cm tin.

Grind almonds in processor.

Whisk yolks & sugar until thick & pale.   Beat whites until very stiff.   Fold together, fold in almonds & zest.

Sift flour & bp, fold in.

Bake 60 - 90 min until skewer comes out clean.

Dutch Apple Tart

BASE
3 C Flour
1 1/3 C
1 C Sugar
250g Unsalted Cold Butter
1 egg beaten. 1 egg to brush top before cooking.
FILLING

6 - 8 apples
3/4 C Currants
3/4 C Raisins
1 Lemon Zest
1 C sugar (pending on sweetens of apples)
1 tspn Cinnamon or to taste

BASE. Combine flour and sugar.
Cut butter into small pieces and add to flour.
Add 1 beated egg and mix all ingredients with your hands until smooth and uniformly colored.
Glad wrap and place in fridge.

FILLING. Chop apples into small pieces.
Add the remaining ingredients.

Grease and line a big spring form tin.
Line bottom with 3mm of pastry and the sides a little thicker.
Place filling into tin.
Roll remaining dough and cut into strips or how ever you like and cover top.

Bake lower in oven to help cook the base.

Bake 180 for 1 1/4 hours.

Dutch Apple Cake

125g Butter
1 C Sugar
2 Eggs
1 1/4 C smooth WARM apple sauce

2 C Flour
1 tspn BS
1/2 tspn Salt
1 1/2 tspn Cin
3/4 tspn Cloves

2 Diced Apples
1 C Raisins
1 C Nuts of your choice

Mix butter, sugar and egg for a few mins.
SLOWLY mix in Warm apple sauce.
Add dry ingredients and mix in.
Add raisins, chopped apple and nuts.

Bake 180 45 mins

This is a winner in this house and goes sooo fast!!
I double it and freeze 1 :) Have made it with maca nuts and walnuts so far. I have even added speculaas spice and not added the cin and cloves. Both are winner on taste!!

Almond Crescents

Makes 5-6 dozen cookies

•1 cup butter (2 sticks), softened
•1/3 cup granulated sugar
•2/3 cup blanched slivered almonds, finely chopped
•1/4 teaspoon salt
•1-2/3 cups all-purpose flour
•Confectioners’ sugar
Cream butter and sugar together. Mix in chopped nuts and salt, then add flour gradually, mixing well after each addition. Refrigerate dough for at least one hour and as long as two days.

Preheat oven to 375°F. Line a cookie sheet with parchment paper. Remove dough from refrigerator. Pull off small pieces and work with hands until somewhat pliable. Roll into two-inch long pencil-thick strips and shape into small crescents.

Bake until set, not brown — about 14-15 minutes. Allow to cool for a few minutes on the cookie sheet, then remove to cooling rack or plate. When fully cool, roll in confectioners sugar.

mmMmm might make these. I will try using ground almonds instead of the chopped sliced almonds!

Chinese Almond Cookies

3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt, 1/2 cup (60 g) almonds) or Ground Almonds
1 cup sugar
1 large egg
12 ounces butter
1 ounce water
1 teaspoon almond extract
whole almonds.

Use a blender to grind the 60 g almonds into a fine powder.

Whisk the flour, salt, baking soda and ground almond powder together.

Cream the butter, sugar, egg, almond extract and water.

Add the dry ingredients to the mixing bowl and mixed briefly to combine.

Form the dough into balls, just bigger than a whole almond.

Pressed an almond onto the top of each ball.

Refrigerating the dough balls for thirty minutes results in better shaped cookies.

These cookies spread out while baking, so a decent amount of space (about two inches) is needed between the balls.

Lightly beat an egg. Using a pastry brush, brush egg onto each dough ball.

Bake for fifteen to twenty minutes at 175°C oven.

Cool them on a wire rack.

These also sound great!!

Coconut and Rapsberry cake

6 eggs
225g castor sugar
190g ground almonds
80g coconut threads
1 heaped tsp baking powder
300 g raspberries or any berries you like

Just use a hand whisk. Beat together eggs and sugar till combined. Add all dry ingredients and mix in. Fold in the raspberries. Bake in a 180c oven for an hour. May take longer depending on your over. Use a 20cm lined cake tin.

Wholemeal Honey and Almond Cake

WARNING !!

bake at 180 !! Just made this and the temp above is WAY to low!!

Cooling now so will post after we have tasted! Looks and smells great!!

I had whole almonds with the skin on and whizzed them in the blender to make ground almonds!! It should work as its wholemeal flour:)

THis is a great thread as I have just bought 1 kilo of ground almonds for $19.90 - thought it was too good a buy to let it go but was going to do a search on almond recipes. By the way - can I freeze ground Almonds?

Yes you can. It is a good idea to keep all nuts in the freezer to prevent rancidity.

OMG !! That Wholemeal Honey and Almond Cake !!

You need me there to advise you on how to cook it! The tasting is the most important part!! hahahahahahaha Just remember to change the cooking temp up!! Watch as it can burn so have some baking paper to place over the top if looking as if its going to turn black.

Yip you can keep them in the freezer or the fridge if your going to be using them up sooner rather than later:) . . . . sneaks off to taste test it again!! shhhhhhhh hehehehe

I go tthem from a place in Pakurange called Trader Jacks?? It was definitley Trader.... Sorry - I had never been there before. Thet had lots of different nuts but I thought the Almonds were a great deal.

That looks like a fantastic recipe for a gluten intolerant person. Thanks so much. Will bake it for my friend, when she stays next. She is also sensitive to so many other things it is hard to keep track.

Bliss Balls

1 C chopped Dates
1 C Raisins
70g Walnuts
1 Tspn Cocoa
1 Tspn Butter
1 tspn Milk
1 tspn Van Ess
Coconut to roll in

Place all into food processor and whiz till smooth.
Roll into balls.
Roll in coconut and place in fridge.

Sounds soo easy!!

Almonds sound good in this or any other nut of your choice!!

Ricciarelli (from deliciousmagazine.co.uk)

250g ground almonds
250g icing sugar, plus extra to coat
½ tsp baking powder
2 large free-range egg whites
1 tsp vanilla extract

Preheat the oven to 180°C/fan 160°C/gas 4. In a large mixing bowl, combine the dry ingredients. In a separate large bowl, whisk the egg whites until stiff. Add the vanilla extract to the bowl of dry ingredients, then fold in the egg white using a metal spoon or spatula. Don’t worry too much about knocking the air out of the egg whites – the dough will feel a bit sticky and heavy.
Shape a walnut-size piece of the dough into a ball, then roll in a shallow dish of icing sugar to coat. Flatten the ball lightly in the palms of your hands, then pinch the sides into a rough diamond shape. Lay on a non-stick baking sheet, then repeat with the remaining dough.
Transfer to the oven and cook for 10-15 minutes until the biscuits start to turn golden brown. Remove the tray from the oven.
Leave the ricciarelli to cool completely on the tray (pick one up early and it will leave its base on the tray). Once cool, you can lift them easily off the sheet with a flat knife.

ALMOND AND TAMARILLO CAKE Serves 8-10 (off viva)
5 tamarillos, peeled and sliced
1/4 cup sugar
150g butter
3/4 cup sugar
1/2 tsp vanilla
2 eggs
1/4 tsp cinnamon
Zest and juice of 1/2 orange
3/4 cup self-rising flour
1/2 tsp baking powder
100g ground almonds

Topping
25g melted butter
1/4 cup brown sugar
Zest of 1/2 orange
1/2 tsp cinnamon
100g slivered or sliced almonds

Place tamarillos into a small bowl with the first quantity of sugar.
Stir and leave for 30 minutes to macerate.

Preheat oven to 180C. Line a 23cm tin with baking paper

Cream butter, sugar and vanilla until light and fluffy. Add eggs one at a time until well beaten. Fold in cinnamon, orange, flour, baking powder and almonds mixing until well combined.
Pour into cake tin.
Spread tamarillos over the top with the juice.
Place into the oven for 30 minutes.

To make the topping
In a small bowl combine butter, sugar, orange, cinnamon and almonds.
Sprinkle over the cake after 30 minutes then continue to cook for 20 minutes until set and nicely browned.
Serve with icecream or lashings of lightly whipped cream.
