Oh I know what you mean!! My little boy loves it but hard to know what to do with it!!! Nacho, Taco, spag bol, shepards pie, good ol mince in mashed spuds and meat loaf is all I know how to do........

*San Choy bow* google it and you will get heaps of recipes....and you can use beef lamb or chicken mince.....
Dont be scared of some of the recipes....just use what you have in the cupboard...

make it to ya flavour and serve as pies done in bread cases with cheese on top, make a typ of samosa flavour how you want spicy indian or not and wrap to make triangle parcels with puff or short pastry. make a spicy mix and serve in lettuce leaves with salad ingredients to add e.g. grated carrot and top with sesame seeds or crunchy noodles.

my hubby LOVES mince - meatloaf, homemade burgers,savoury mince,shepards pie ,lasange, spag bol, ming ling (recipe in trademe cooks forum-very yum) ,meatballs,nachos, tacos, rice risottos dishes, curry , oh so many things you can do with it.

For next time spag bol casserole is yummy. Fry onion, garlic, mince, add tomato puree, tom paste, 1/4 t cinnamon, mixed/italian herbs, bay leaf, salt & pepper. Simmer for a while then remove bay leaf. Add cooked spaghetti to dish, cover with meat then make white sauce with 2 cups milk (I add cheese) and spread on top. Sprinkle with cheese and cook 180 til bubbling. Yummy. Alison Holst's mince stroganoff is really enjoyed here too.

Chilli, spaghetti bolognaise, pasties (I know traditionally it's not mince but I always do), the list is endless. Go out and buy one of those cookbooks that are just about mince. Loads of ideas.

I make a meatloaf with boiled eggs in the middle makes really novel slices actually haven't done that for ages must do it again soon. Don't even have a recipe just mince an egg a few tsp of flour chopped herbs from the garden some crushed garlic and a finely diced onion mix it all up with salt and pepper lay in a laf pan and set the boiled eggs in and cover over with the mince brush some tomato paste across the top and bake at 150 for an hour. Mum used to add sausage meat as well but I don't.

The Leggos Pasta Bake sauces are really nice (yes I admit I buy ready made sauces and eat carbs - shock!). Home made burgers are always a hit in our house too and my kids love Mexican food.

Follow this link for Bobotie which was in the NZ Herald one Saturday or sunday a few months back. Very tasty. My husband loves it. Works just as well with half the amount of mince.

Mexican Potato Casserole
Ingredients
• 1 teaspoon olive oil
• 500g beef mince
• 2-3 cloves of garlic – finely chopped
• 1 green capsicum - chopped
• 1 yellow capsicum - chopped
• 8 spring onions (2 bunches) sliced (or one ordinary onion, finely sliced)
• 3-4 medium tomatoes – chopped
• 1 teaspoon chilli powder (or a lot less, according to taste)
• 1 tablespoon ground cumin
• 1 teaspoon garlic salt
• ½ teaspoon black pepper
• ¼ teaspoon salt
• 3-5 large baking potatoes, sliced thin
• 1 cup grated tasty cheese
Method
1. Preheat oven to 180°C – aerobake.
2. In a large pan, heat the oil, add the mince, garlic, capsicums and spring onions.
3. Cook, stirring as needed, until the mince is browned and the vegetables are softened.
4. Add tomatoes, spices and salt, cook, stirring as needed until the flavours are blended, about five minutes.
5. Arrange layers of the potatoes and beef mixture in the baking dish.
6. Cover with foil and bake 30-40 minutes (may take longer depending on the type of potatoes).
7. Sprinkle evenly with the cheese.
8. Bake until the potatoes are cooked through and the cheese is melted, about 10 minutes longer.
9. Serve with a green mixed salad.

Spicy Indian Mince and Rice

Ingredients
• 1 tablespoon oil
• 1 large onion, chopped
• 3 cloves garlic, coarsely chopped
• approx 400-500 grams beef mince
• 1 cup basmati rice
• 400 gram can of tomatoes in juice – can use Indian spiced tomatoes
• 2 cups hot water
• 2 teaspoons chicken stock powder
• 2-3 bay leaves
• 2 heaped teaspoons garam masala
• 1 teaspoon salt

Spice mix – can halve the quantities for a milder, less aromatic dish
• 2 teaspoons curry powder
• 2 teaspoons ground ginger
• ½ teaspoon chilli powder or to taste
• ½ teaspoon ground cinnamon
• ½ teaspoon ground cloves
• ½ teaspoon ground black pepper
• 3-4 cardamom pods, well crushed, or ¼ teaspoon cardamom powder
Method
1. Heat the oil in a large pot.
2. Add the onion and garlic and cook on a moderate heat for about 5 minutes.
3. Add the spice mix and stir through, then add the mince.
4. Continue to cook, stirring frequently to break up any lumps, until the mince has lost its pink colour.
5. Add the rice, tomatoes in their juice, water and stock powder and bay leaves.
6. Bring to the boil, and then reduce the heat to a gentle simmer.
7. Cover and cook, stirring occasionally, for about 12 minutes.
8. Stir in the salt and garam masala.
9. Leave to stand for about 15 minutes, then serve.

Minced Beef with Hoisin, Ginger and Orange

Ingredients
• 2 tablespoons orange juice
• 1 tablespoon cornflour
• 500 grams lean beef mince
• 1 tablespoon sesame oil
• 2 tablespoons ginger, finely chopped
• 2 cloves garlic, finely chopped
• rind of 1 orange, grated (optional)
• ¼ cup Hoisin sauce
• 1 bunch spring onions, chopped
• Rice (preferably jasmine) or couscous – cooked, to serve
Method
1. Combine orange juice and cornflour in small bowl and set aside.
2. Sauté mince in large wok or frypan over medium-high heat until cooked through; break up with a fork.
3. Drain off excess juice and fat, remove mince from pan and set aside.
4. Add sesame oil to pan and stir-fry ginger, garlic and orange peel (optional) briefly.
5. Add spring onion and stir-fry 1 minute.
6. Return meat back to the pan and add Hoisin sauce; stir until blended.
7. Add orange juice mixture and stir until thickened (about 1 minute). Spoon onto rice or couscous.
8. Serve immediately.

I make my favorite flavour mince and make little pies by using frozen Aunty Betty Yorkshire pudding case as the pie base, so yummy use small one's for the kids and large one's for adults.

I primarily use mince now for Wraps. Cook with grated carrot, some red kidney beans and then spoon a little onto a wrap with Humas, (choice of sauce BBQ, sweet Chilli etc) Capsicum, tomato, lettuce, grated cheese, yogurt then roll and eat.

My sister in law makes small pastries with it by cooking it with mixed veges and a little extra frozen corn then pacing a spoonfull or two in some puff pastry and cooking in the oven.

Another favourite with kids (big and small!)

PORCUPINES

480 gms lean Topside Mince 1 Onion, finely diced
4 tsp. Beef Stock 120 gms uncooked Rice (pref. long grain)
1 tin WW Tomato Soup 200 mls Water

Combine mince, onion, stock and rice then form into 16 balls.

In a large pan, mix liquids and bring to the boil. Gently add the meat balls and cook on a rolling boil for 30 minutes. (Keep an eye on this mixture – sometimes needs further water added.)

Have to 'fess I don't use the WW soup, rather the rich concentrated one. As the rice cooks it makes the 'spikes'.

Easy Mince Curry
Heat 2 Tbls oil over medium heat .Add 2 cloves crushed garlic, 1 chopped onion and 2 Tbls curry powder. Cook until soft.
Add 500 - 750 gm beef mince and brown for 5 minutes
Add 6 chopped tomatoes (or 1 can), 2 Tbls tomato puree or paste, 2 Tbls vinegar or lemon juice and a cup of water.Simmer, covered, until meat is tender. Serve with rice. Can use the same recipe with cubed beef, lamb or chicken, but I always use mince.

Hey tasman, would you mind posting the recipe please. My mother in law used to make these, i think they called neens meatballs, but i have lost the recipe. Very nice and melt in ya mouth, with a sweet taste if i remember. Many thanks.

I did it the other night and mixed onion and some parsley in it. Just browned it in pan. then mix in a couple of eggs Then put half on the bottom of a overproof bowl then layered with vegetables an cheese then put the rest of the mince on top and topped with more cheese and breadcrumbs and cooked in oven. sort of a lasagne without the pasta.

I bought a cheap cast iron hand mincer off TM a few years back #5 size really transformed wild meats like pork, goat, venison, hare, etc specially the hare and the goat meat. Minced Hare is one of my favourites mmmmmmmmmmmmmmmmmmmmmmmm

For Cherie19.......meatballs in ginger sauce
sauce:
5 gingernuts(not the budget ones)
2 1/2 c water
1/4 c brown sugar
2 beef stock cubes
2 Tbsp vinegar
Meatballs:
500g mince
3/4 c soft breadcrumbs
3/4 c wholemeal flour
1 chopped onion
salt n pepper
1 egg
Combine mince with egg and other ingredients. Mix well, shape into balls.
Sauce: soak gingernuts in water in pot for 15 mins then bring to the boil, stirring constantly, add remaining ingredients. Place balls into casserole dish and pour sauce over.Put lid on and cook 20-30 mins at 180

I takw it you mean minced beef.

Minced Beef with Peanuts

Serves 4

1 tab oil
1 ½ tab minced garlic
1 tab minced ginger
3 tab minced spring onions
450 g minced beef or venison
3 tab whole yellow bean sauce
1 tab chilli bean sauce
1 ½ tab Shaoxing wine
1 tab dark soy sauce
1 tsp salt
½ tsp black pepper
2 tsp sugar
3 tab chicken stock or water

garnish: 50g roasted peanuts, crushed. 3 tab coarsely chopped spring onions

Prepare garlic, ginger and spring onions, combine. Heat a wok and add oil. When smoking hot add garlic, ginger and spring onions, stir fry 15 sec. Add meat, stir to break up, fry 2 min. Add rest of ingredients, stir well, lower heart and simmer 5 min.

Pour into deep dish, sprinkle garnish on top. Serve with noodles or rice.

Cook : mushroom, bacon and onions all finely diced. Set aside to cool.
Add to raw mince, salt and pepper and fresh bread crumbs. mix well.
Shape into a sausage shape, and insert a cube of flavoured tofu. (i use blue cheese)
wrap sausage in streaky bacon and cook in the oven at 180 for about 40 mins.

Beef and Bacon Rissoles With Gravy
Ingredients:
2 slices bacon, chopped finely
500g ground beef
1 cup breadcrumbs
1 egg
3 green onions
2 tablespoons Worcestershire sauce
¼ cup coarsely chopped fresh parsley
2 tablespoons barbecue sauce or (3 tbs oyster sauce)
Sauce
2 tablespoons Dijon mustard
2 cups beef stock
1½ tablespoons oyster sauce or (barbecue sauce)
1½ tablespoons cornstarch for thickening.

Directions
1. Cook bacon in a large non-stick frying pan over medium- high heat until crisp. Remove from heat.
2. Using your hands, combine bacon, beef, breadcrumbs, egg, finely chopped green onions, parsley, Worcestershire sauce and half the barbecue sauce; mix well. Shape mixture into eight rissoles (small patties.).
3. Heat oil in the non-stick pan over medium heat. Cook rissoles until browned on both sides and cooked through. Remove from pan, cover to keep warm.
4. Drain any excess oil from pan, add mustard, stock and remaining barbecue sauce; bring to the boil. Combine cornstarch and water, stir into gravy and cook until gravy thickens.
5. Serve rissoles with gravy, cabbage mash, and cooked greens.

I was running a little short on ideas with mince the other night and did this lazy man's lasanga. chop and saute onion and garlic in a pan add mince, (carrots and peas optional0, stir fry until meat is cooked, then add a tin of flavoured tomatoes. (I used garlic ones but tend to use garden vege variety normally). Cook for a few mins the add penne paste (or spirals), remove from heat. Make a cheese sauce but not too thick need to be able to pour it.
Pour half the cheese sauce over the base of a lasanga dish, add the meat and pasta mix, top with the rest of the cheese sauce and I covered lightly with breadcrumbs and a sprinkling of grated cheese (or you could make a crumble mix. Bake for about 30mins in a moderate oven, until top is golden and pasta cooked.

Kai SI Ming
500 gms mince
1 med onion
250 gms sliced green beans
shredded cabbage
Fry the mince in a knob of butter, when browned add the chopped onion then add sliced beans.
Then add 1 tablespoon mixed herbs, 3 tablespoons uncooked rice, 1 desert spoon curry powder and a packet of chicken noodle soup.
with 750 mils of water.

Bring to boil and simmer for 30 minutes making sure the contents are evenly distributed and do not stick to the bottom.
Then as the water is almost absorbed add the shredded cabbage and heat through for mo more than 10 minutes.
Serve hot on buttered bread.

The original recipe also had salt added to it but these days I think with the saltiness of the chicken noodle soup it seems not necessary.
Also the original recipe had imperial measurements. Over the years I have found that the meat and vegetables can be approximate but it is best to keep the herbs spices and soup mix in these exact portions.
The recipe has the added advantage as it is cooked in a 3 litre saucepan as a one pot meal.

My family also liked any left over in a sandwich the next day.

I found this recipe in a book put out by a cancer society located in Waipukurau. It was titled "What shall I make?"
I purchased this recipe book when I was a bride in the early 1970s and it has proved to be second most useful recipe book in my collection (Edmonds being the most useful).
