best ever chocolate cake and so easy

I make this once a week makes a small rosat pan size cake

3.5 c flour
3.5 c sugar
3 t/s Baking powder
1.5 c cocoa
1 cup oil
2 cups milk
3 t/s baking soda
1 t/s salt
4 eggs
1 teaspoon vanilla
2 cups of boiling water (added at end)

Put all ingredients (except for the water) in a large bowl mix well to a batter. add boiling water and mix till smooth bake in the over at 160 for 1hr. you can split the mix and make two smaller cakes or make 1 smaller cake and put the rest into muffin tins the choice is completely up to you. this is an excellent cake if you have a large family or just want to impress people. gets moister by the day so stays nice and fresh very simular to mud cake.

how big is the roasting dish. Can you give measurements please as I'd love to try this. Thanks

the roasting pan i use is 33x23cms if that helps. I line mine with what they call a bbq liner which make fat free cooking on a bbq you can buy baking ones as well mitre 10 sell them. this is very easy and if you you could freeze half if you so wished.

I have made this cake twice now and both times it has been a hit. Hubby has requested it to be made for his 40th birthday! I put a nice chocolate icing on it and of course for the kids, I sprinkle a few hundreds and thousands over it!!! Yum!

Seems like a heap of sugar, a cake with the same amount of flour as sugar? Could I use less & have it still turn out?

I have a 'similar' recipe..which gets made each week here..dead easy!

4 T oil, 1.5C sugar, 2 eggs. 1/2 C cocoa, 2C sr flour, 1 tspn Bicarb soda, 1 tspn vanilla ess, 1C boiling water. Bung in a bowl and beat well.
Place in greased cake pan and bake 40-45 mins [180/350] This is moist and rich. Ice with choccy icing!

Hi Lorraine well I haven't tried doug one yet ( but will do) and guessing due to the amounts ends up a smaller cake. but can definitly reccomend the first makes a good sized cake. Roasting pan size and 10 cm high so if you are not big eaters i suggest you can cook in 2 lots or cut in half and freeze

oh my goodness that really is the best chocolate cake i have ever made!!!! and i am not usually very good at making cakes but it was sooo moist and not so rich that i felt sick. it makes a hell of a lot which was great i made two very large cakes out of the recipe,mmmm is it bad that 3/4 of the first cake is already gone??

Thanks Hooksie60 for that recipe l made it and cut it in half and froze half and then had to get it out a couple of days later when the first lot vanished,lol.
Yes it is a lovely moist recipe and everyone loved it.
l got lots of comments about how moist and tasty it was.

I make that one too! Not too much sugar, especially if your icing it as well :O)

Have just made No1's cake. Turned out very large. I am going to take it to work for morning tea tomorrow. If it tastes as good as it looks it will be a big hit.

...I make this cake regularly too...I use self raising flour instead and leave out the baking powder and I only use 2.5 cups of sugar because the icing I put on the cake is sweet enough...

Turns out perfect every-time...It's the best!

I made it for a friend's b'day and it got rave reviews from everyone - including visiting Italians who thought it was the best cake ever! Thank you hooksie60 :-)

By the way, I made a large cake and had enough for 12 muffins (and they are the richest & softest muffins ever!)

do you need baking soda in this cake? My DH hates the stuff and won't eat anything I make if it includes it. Can I just miss it out? What does it actually do being that there is also baking powder in it?

Mad this cake but thought it sounded a hell of a lot of cocoa so I only used a small cup and it was still fairly dark Glad I didnt put the amount stated. This is an awesome cake. Tonight I cut into big squares cut through the middle put a dab of lemon curd and whipped cream put the two tog. cream on top with flake choc hmmmmmmmmmmmmmm wow yum what a lovely desert with a little liquid choc sauce around plate. My friend has a resturant and wants that on her menu. Thanks a lot. Love it.

I am glad so many people have enjoyed this recipe as much as I do. its the easiest and never fails. and sure to impress your friends and families they won't believe you made it.
Another thing I have tried with this recipe is it makes great muffins and if you want to really impress cook in two tins once cooked and cooled put cream on one the pop the other on top very naughty but nice.....happy cooking everyone

sounds great.
a recipe i 'made up' and have been using lately for my icing, is a couple of tablespoons of butter - melted with some chocolate chips (about half a cup), icing sugar and hot water. i melt the butter and chocolate chips and add the icing sugar and hot water to mix to the right consistancy. makes a nice firm icing.

great to see you all using this recipe in different ways. Its good as a loaf as well It May seem like alots of ingredients but makes alot and goes a long way so whether you make I huge cake or split it up the choice is yours. Happy baking every one
