Goodness..... yours are early!!!! Mine are only the size of walnuts at the moment. LOL Still got 8 bags in the freezer from last year. Chucked em in whole. Got pigs going to freezer soon, might feed them up LOL

feijoa Cake FEIJOA CAKE - 1/2c milk, 2 eggs, 1 1/4 c sugar, 1 c mashed feijoas, 1 t vanilla essence, 75g butter, mix all well ( in a processor if available) add 2 c flour, 2 teasp. baking powder, 1/2teasp. salt, pour into cake tin and bake approx 40 mins @180*. Can ice with vanilla or lemon icing.

FEIJOA CHUTNEY - Top & tail 1Kg feijoas but leave the shins on, 750g diced onions, 2 cups white sugar, 4 cups cider vinegar, 1tbsp each: curry powder, ground ginger, 1 tsp each: cayenne pepper, whole cloves. Combine the feijoas & onions in large pot. Add remaining ingredients. Stir well while bringing to the boil. Simmer until thick, approx 1 1/2 hrs. Spoon into hot sterilized jars. Seal when cold. Makes approx 5 cups.

... FEIJOA AND ORANGE JAM - 1kg feijoas, 60ml water, 850g sugar, juice and finely grated zest of orange, juice of 1 lemon Peel and chop the fruit and put into a saucepan with the water. Simmer until the fruit is very soft. Add remaining ingredients. Boil and test regularly.

... FEIJOA JAM - Top and tail feijoas, leave the peel on the sides and slice fruit. Weigh how much you have got and use the same amount of sugar and the juice of 2 to 3 lemons to help it set. I usually put the fruit on with the lemon juice and a bit of sugar on very low heat to get the juices out. Then I raise the heat while stirring to boil some of the liquid off before putting the rest of the sugar in. Very easy and always keeps well.

use the above recipes and add some ginger or some crushed pineapple. Feijoas jam can be made using peeled or un-peeled fruit and they are different.

... FEIJOA DESSERT - 12 feijoas, 1/4 cup crushed pineapple (and the juice), 3 Tbsp brown sugar, 2 Tbsp rum (optional), vanilla ice cream to serve. Scoop the pulp out of the feijoas and put into a microwave-proof casserole dish, add pineapple and stir gently. Sprinkle the brown sugar on the top, and, if you're using rum, sprinkle that on as well. Stir gently (again). Cook in the microwave on high for 3 minutes, and then stir (again!!). Serve over scoops of ice cream. This is very simple and quick, and tastes delicious

... FEIJOA ICECREAM - 400gm feijoas, 300ml cream, 180gm sugar, 1 egg white. Process feijoas and sugar in food processor until syrup. Beat egg white until stiff. Whip cream and combine all together and freeze. Makes about 1 litre.

FEIJOA SALSA - 3 feijoas peeled and cut into tiny dice, 1/2 small avocado peeled and cut into tiny dice, 1 medium red onion peeled and cut into tiny dice, 1 tablespoon brown sugar, 1 small red chilli very finely diced or chilli seasoning to taste, 1 heaped tablespoon finely chopped fresh mint. To make the salsa, simply combine the ingredients in a bowl.

... FEIJOA CLAFOUTIS - 10 - 15 Feijoas, 90gr plain flour, 90gr caster sugar, 250ml milk, 60ml cream, 60gr melted butter, Icing sugar for dusting. Preheat oven to 180º & lightly grease a 1.5 litre ovenproof dish with melted butter. Scoop out feijoa flesh and chop roughly. Spread in the dish. Sift flour, add sugar, milk, cream & butter, whisking until just combined. Do not overbeat. Pour batter over feijoas & bake for 30-40 minutes, or until a skewer comes out clean when inserted in the centre. Dust generously with icing sugar. Best served warm, with either custard or whipped cream.

bumping for those looking and note the link to the other site. Check for muffin recipes as well, use in place of/or with apple in sponge pudding and crumbles pies.
They also freeze, Prepare a light syrup and chill it then peel and cut in fresh feijoas and freeze in suitable containers. If they are peeled they seem to need the syrup to stop them drying out and going brown.

rubs tummy I have just made this afternoon the feijoa cake - exactly as above and it's beautiful. I'm not normally a brilliant baker but this cake is lovely, moist and each slice cutting perfectly yummmmyy

best fruit tree ever ......You've got to try the wine. Home made it is perfect and quite delicious.
Nice stewed with apples in a simple pie (add sugar and a little cinnamon).
I have a very small section (coastal) and have planted about ten trees, as they provide coastal shelter and food. PS: They do not like their roots disturbed so don't dig around the base of a tree. Most types self fertile.
Water during dry spells.
A great tree, so their is no need for people to go hungry when there are so many plants that are easy to grow food with. Plant one now!!

... FEIJOA LOAF - This is great as you can freeze the first part of the recipe till you need it then thaw and add your dry ingredients. (from last years feijoa thread) 10 - 15 feijoas peeled & cut, 60g butter, 1c sugar, 1c water or milk boil all together for 5 mins then mash and cool ( can freeze at this stage) then add 2teasp. baking powder, 1 egg, 2c flour, bake at 180* till cooked through and golden double the recipe for a big oven tray.

... FEIJOA MUFFINS - 2 cups self raising flour, 75gm butter, melted, 1 cup chopped feijoas, 2 eggs, finely grated rind of 1 orange, 1/4 cup orange juice, 3/4cup sugar. Melt butter-mix in feijoas. Add unbeaten eggs, orange juice and rind. Mix until combined. Add sugar and flour, put into muffin tins and sprinkle with a mixture of cinnamon and sugar. Bake at 200C for 15-20 mins.

... FEIJOA CRUMBLE PIE - 400-500g peeled & sliced feijoas. PASTRY- 1C flour, 60g butter, 3-4 Tblsp cold water. Rub butter into flour till looks like coarse breadcrumbs. Add water gradually while mixing till it comes together and forms a smooth ball. Chill in fridge for 20 mins. TOPPING- 1/4C flour, 1/4C coconut, 1/4C rolled oats, 1/4C Brown sugar, 50g butter. Mix all dry ingredients together and rub in butter till crumbly. Pre-heat oven to 200*C. Roll out pastry to fit a 23cm flan tin. Place 1/2 of feijoas in pastry shell and sprinkle 1/4 of crumble mix over. Cover with remaining feijoas and then crumble mix. Bake for 20mins until pastry is golden. Reduce temperature to 180*C and bake another 15 mins.

You are all so mean When I was very little I ate a whole paper shopping bag (remember those days???) of feijoa's skins and all. I loved them so much. Now I have an allergy and cant eat them! Its so not fair lol

Feijoa Muffins Ingredients

2 cups flour
½ teaspoon mixed spice
3 teaspoons baking powder
1/2 cup caster sugar
1 egg
100g butter, melted
1 cup milk
1 ½ cups mashed feijoas

Method

Preheat oven to 200 C Sieve flour,mixed spice, baking powder and sugar into a bowl. Lightly whisk egg and combine with butter and milk. Pour liquid and feijoa pulp into dry ingredients and mix very gently just to combine. Spoon into greased muffin tins and bake for 10-15 minutes until muffins spring back when gently pressed

Feijoa Chutney Ingredients

1.4kg peeled feijoas
500g cooking apples
500g onions
4 cups white sugar
1 tablespoon common salt
1 1/2 cups vinegar
1 tablespoon tumeric

Method

Add all ingredients to a preserving pan and bring to the boil, stir while sugar is dissolving. Simmer for 1 1/2 hrs Cool and pour into sterilised bottles and seal.

Hi Rab... yes the skins do soften when cooked... ... however I've found that the skins cause a bitterness to anything they're left in, from bottled feijoa's to chutney's, pie's, muffins etc. I always peel them and find I get a nicer feijoa flavour than when the skins are left on.

Guess what! Our tree has 14 feijoa's on it - the first season for fruit from it - the fruit are large and ever so tempting - I'm checking them almost every day! Can't wait till they're ready :-)

FEIJOA AND DATE CHUTNEY - 12 feijoas peeled and chopped 2 onions, finely chopped 1 cup of dates, roughly chopped 1 cup wine vinegar 2 cups brown sugar 1 Tbsp salt 1 tsp ground coriander 3 star anise 3 cloves garlic, peeled and chopped half tsp chilli paste place all ingredients in saucepan and bring to boil, cover and simmer gently for 1 to 1 and a half hours or until thickened. Bottle and cover when cold.

This is a very popular cake recipe - posted by Smiley-Cherub a couple of years ago - and enjoyed by many since.. The recipe includes a whole orange - skin included.. substitute feijoa's to equal the size of an orange and make the recipe as shown.. I would peel the feijoa's, as the skin can sometimes have a slightly bitter taste. Other fruit can be substitute - a pear, apple, lemon, banana, passionfruit, etc..etc.. Add spices, coconut, cocoa, choccy chips, etc... etc.. and make this easy cake in a variety of ways.. The recipe?... next post...

Magical Orange Cake: 1 whole orange, skin included, washed and processed to a pulp, 125gr melted butter, 1 cup sugar 2 med-lge eggs, 1 1/2 cups self-raising flour. YES, ITS AS EASY AS IT LOOKS! If you have a food processor, just throw everything in together and mix till all combined. Now, I don't have a FP so I did it the old-fashioned way (LOL) Mix together the melted butter and sugar, add egg then orange pulp. Stir to combine then fold in sifted SR flour. Pour into lined loaf tin and bake at 180C for approx 35-40 mins or ready when tested with skewer. I doubled this recipe - it made a lovely ring tin cake which I iced with orange icing and also a loaf which I left plain. Such an economical recipe! Couldn't believe how yummy such a simple recipe could be. Posted by Smiley-Cherub.

You could make the cake using feijoa's or other fruit, and serve it with custard.. or make it as a self-saucing pudding.. mix as above and place it in a greased casserole type dish. Sprinkle over 1 cup white sugar and the rind of two oranges. Mix: 1 1/2 cups hot water with the juice from the two oranges, and pour that carefully over the sugar mix. Bake at 180°C for 30-40 minutes. For other variation's, substitute the orange for the equivalent amount of mandarin's, lemon's, banana, plum's (remove stones), any kind of berries, feijoa's, tamarillo's, kiwifruit, fresh or drained canned or preserved peaches, nectarine's, pineapple, plums, apricots, etc..etc..

More fabulous feijoa recipes.. Wow..wonderful recipes in this thread;just wanted to share a couple of my fav's...
Feijoa Walnut Cake: 2c feijoas,peeled & roughly chopped,1c walnut pieces,1c sultanas,1c sugar,100g melted butter,1 egg,1c S-R flour,2tsp mixed spice.
Mix first 4 ingredients together in large bowl,beat egg & butter together then mix them into the feijoa mix.Sift flour & m spice & add to mixture stirring lightly.

Feijoa Walnut Cake cont... Turn into a well greased 25cm cake tin and bake for 45-50 mins.Cool in the tin.Sprinkle with icing sugar & serve...a wonderfully moist and delish cake.
Also can use this recipe to make banana cake by replacing feijoas with 2 peeled & roughly chopped bananas.
These are 2 really easy (and delicious) cakes. Have had these recipes for years, they're by Glenda Gourley.

But wait...there's more! Feijoa & Apple Muffins: 2 eggs,1/2c milk,1/2c oil (rice bran oil is tops in my (recipe)book)1c sugar,2tsp cinnamon,1tsp nutmeg,2tsp baking soda,4c S-R flour,3/4c roughly chopped feijoas,3 medium apples,cored.
Place all ingredients except the flour into food processor,whiz till combined well,add flour,pulse till mix looks like lumpy porridge,spoon into muffin tins,bake 200c for 15mins... easy,quick & moist muffins.

In the above muffin recipe the apple & feijoa skins can stay on if you wish..or peel..up to you.Variations on this recipe are apple & berry (4 apples,1c berries,fresh or frozen(blueberries are yum)and are not added to mix but pressed on top of each muffin.And apple & rhubarb muffins:2 apples,4c rhubarb,roughly chopped.
All variety's are really yummy,and are all from Glenda Gourley..also have recipes for kumara (or pumpkin) & orange muffins and mini carrot (or courgette) cakes...if any one would like them.
Does anyone still grow rhubarb??

Hi Zodiacgal.. your recipes sound mouthwateringly delicious... yes.. rhubarb is growing here - and there must be in lots of gardens still as threads pop up quite often with people asking for rhubarb recipes.. I've seen a recipe for Rhubarb cordial which is my next recipe to try using it..

O man you guys are lucky living where these lovely fruit grow. I have a tree which has grown heaps over summer but no fruit this year. We used to get fruit off our tree at our old house. I bought some off TM and they arrived yesterday, I have to say there won't be any left by the end of the weekend. I will ferret some away so I can bake with them me thinks. I got told today the apple and feijoa cake is to die for

Barloo I made that cake this morning and just softened the butter, it worked really well and I took it for lunch to my daughters equestrian event and it has alllllll gone!! I added 2 apples to the food processor and an extra 1/2 cup of flour. Yummy

Today I just scooped out the middle and threw that with the apple in the food processor, i had all the other ingredients ready as feijoas do go brown real quick.
