13 | Anzac Biscuits 1 cup flour1 cup Chelsea White Sugar1 3/4 cups coconut (coarsely shredded coconut is great for texture)1 1/2 cups rolled oats1/4 cup chopped walnuts 100g butter2 tablespoons Chelsea Golden Syrup1 teaspoon baking soda2 tablespoons boiling water Method Preheat oven to 160*C. Mix flour, sugar, coconut, rolled oats & walnuts in a bowl. Melt butter & golden syrup together. Mix baking soda with boiling water to dissolve. Mix both butter & baking soda mixtures together in a large bowl. Add flour mixture & combine.Roll teaspoonsful into small balls. Place on a well greased or baking paper lined oven tray & press flat with the back of a spoon. Allow room for biscuits to spread. Bake for 25 – 30 minutes. 14 | Belgian Biscuits 1 cup brown sugar-packed, 200gr butter, 1 lg egg, 1 tsp cinnamon, 2 tsp mixed spice, 2 tsp cream of tartar, 1 tsp baking soda, 2 cups flour. Cream butter & sugar until light &creamy. Add egg & spices mix well. add rest of dry ingredients. Mix well. Turn out onto floured board & form into 3 sausage shaped rolls., about 5 cm in diameter. Chill in fridge or freezer until firm enough to cut into thin slices. Each roll should make approx 30. Bake 180*C for 10 mins. 15 | Bulk Refrigerator Biscuits Makes 100 (depends how thick you slice the mixture of course) 250g butter, 1 cup white sugar, 1 cup brown sugar, 1 teaspn vanilla, 2 eggs, 4 cups flour, ¼ cup cornflour, 1 tblspn baking powder, ½ teaspn salt. Cream together butter, sugar and vanilla, until light and fluffy. Beat in eggs one at a time. Mix dry ingredients together and work into the creamed mixture. Divide dough in ¼ s and add any of the following: - ½ cup coconut - OR - 1 tblspn cocoa - OR - ½ cup cornflakes - OR - ½ cup currants or sultanas - OR - almond essence and top each biscuit with an almond. Form into 4 rolls, wrap in foil and freeze. Chill first if too soft to handle. Thaw until soft enough to slice. Cut into 1 cm slices. 16 | Caramel Drops Filling:20g butter, 3 tsp golden syrup, 2 tsp brown sugar and 1/4 cup condensed milk. Heat ingredients using a low heat until mixture thickens. Remove from heat. Base:125g butter, 1/4 cup caster sugar,1 cup flour and 2 tblsp corn flour. Cream butter and sugar, stir in flour and cornflour. Knead lightly until smooth. 17 | Caramello Chocolate Cookies 1 egg;150g brown sugar;60ml vegetable oil;75g plain flour;50g self raising flour;1/4 tsp baking soda;100g dark choc,melted;250g caramello chocolate squares. Preheat oven to moderate.Lightly grease two oven trays. Beat egg,sugar & oil in small bowl with electric mixer until mixer changes in colour. Stir in sifted dry ingredients and dark chocolate;stir until mixture becomes firm. Centre one square of caramello choc on 1 heaped tsp of choc mixture;roll into ball,enclosing caramello square. 18 | Cherry Macaroons ½ cup condensed milk, 1 cup desiccated coconut, 1 cup shredded coconut, 100g packet glace cherries, 1 Tbsp self-raising flour, 1 Tbsp custard powder. Turn oven to 180°C. Lightly grease 2 biscuit trays. Put condensed milk and all coconut into a mixing bowl. Chop cherries finely, add to bowl. Sift flour & custard powder into bowl. Mix well. 30 | Gingernuts 100gms butter, 1 tab golden syrup, 1 cup sugar, 2 tsps ginger, 1 tsp mixed spice, 1 egg, 1 tsp baking soda, 1 3/4 cup flour. Melt butter in large pot or bowl. Remove from heat and stir a syrup, then sugar, ginger and egg. Beat with a forktill well mixed then add baking soda and mix thoroughtly. Add flour and stir again. Mixture will be soft but workable if you keep you hands damp. Form into 70-80 marble sized balls and place on ungreased trays. Leave room for spreading. Bake 180 for 10 minutes or until golden brown. 34 | Honey Jumbles (Microwave Recipe) 25g butter, 3tblsp honey, 125g sr flour, ¼ tsp ground ginger, ¼ tsp ground cinnamon, 1c icing sugar, a little water, food colouring. Line a microwave safe baking tray or plate with baking paper. Combine butter and honey in a heatproof bowl and cook on high power for 45 seconds. Add flour, ginger and cinnamon and mix into a firm dough. Roll out between 2 shets of plastic wrap until dough is 1cm thick. Using a sharp knife, cut into oval shapes from the dough until all the mixture is used. Place 6 biscuits at a time around the outside of a baking tray and cook on high power for 1-2 minutes or until biscuits are set. Stand for 5 minutes then cook the next batch. Combine icing sugar with enough water to make a smooth icing then stir in a few drops of food colouring. 47 | Rum & Raisin Slice 1/2c raisins, 1/3c dark rum, 200g dark choc, 60g butter, 1/2c caster sugar, 250ml double cream, 1c flour, 3 eggs lightly beaten. Combine raisins & rum. Chop choc & butter into small pieces & melt over double boiler. Stir in cream & sugar. Sift flour into bowl & add raisin & rum mix, choc mix & eggs. Mix well. Pour into a lined tin 18x28cm & bake at 180° for 25-30 mins till set. Cool completely & refridgerate overnight. Cut into small pieces & sprinkle with cocoa powder.
