Can I just get a M2 SSD and plug is straight into the PCI-e slot of my Dell 7010?

just chuck in a sata SSD then, price is not much more than m.2 at that size, or you might get them cheaper on amazon/aliexpress etc

I have one of those adapters king1 posted (for an NVME drive), it works fine. Whether you can run your OS off them probably depends on the age on the machine. On an older Gigabyte Z77 (Sandy Bridge Gen) i had to manually modify the bios hex myself via a online guide to get it to recognise it as a boot device
