Does anyone have the Riverstone Kitchen recipe book 'Recipes from a chefs garden' for these delicious apricot and date scones.

I would just use my own recipe and add both, with a hint of cinnamon to boost. Yum combination.

Btw, replacing some of the liquid in a scone mix with yoghurt makes for a very tender scone.

I sooo need to try making these scones. Do you think tinned apricots would work. Riverstone apricots seemed to be more plumper than dried apricots although I guess if they were soaked in juice that would work too?

I make an apricot loaf where the apricots are soaked in orange juice, gives it a sweeter flavour, and I sometimes add chopped dates as well.

im a bit like you. the other day had a caramelized onion muffin, came home and made some but I used a scone mix, not the same but just as good.

Yeah soaking any dried fruit will make it taste better I've found - my fruit loaves are to die for apparently, lol. If you've not time to soak then a gentle warm in the microwave tends to plump fruit but be careful as the fruit being so full of sugar can overheat very quickly.
