Rhubarb

I have an abundance of Rhubarb and not wanting to waste any. I wondered what's everyone doing with theirs? Any ideas would be much appreciated :)

Freeze it.

It does make superb juice too.

Make chutney, Ill put up a good recipe if you want it.
freeze it - pre sliced for crumble.

please do. I would love to try chutney. I have been making a cordial, compote and stewed some too. I will freeze some for later use. Thank you

Rhubarb Relish
1.8 kg finely sliced rhubarb
1.8 kg sugar
2 tsp ground cloves
4 cups vinegar
salt
sultanas (optional)
3 tsp cayenne pepper
6 large onions, chopped finely
boil all together for 2 hours, then put in hot jars and seal, (I use old jam jars etc), will keep for 1 year.
(I use a handful of chopped dates or cranberries instead of sultanas, white vinegar and added 1tsp of 5 spice)

Rhubarb crumble!
Yummmm. When you make it I'm happy to help with a taste test for you.
I'll need cream and ice cream too (Vanilla or Hokey Pokey thanks).

Rhubarb crumble
125 g butter
1 cup flour
2 tsp baking powder
1 cup brown sugar
3 tbs coconut
nutmeg or cinnamon
rub butter into the flour,
add other ingredients
put on top of sliced rhubarb
cook 170* 30 minutes

Rhubarb and banana jam. Rhubarb and strawberry jam. Rhubarb and ginger. Remember these from my childhood. Rhubarb /apple stewed served with custard. Freeze for later on as well.

Make jam - mix with strawberries, or other berries - it will make the berries go further, and doesn't change the flavour of the berry jam.
BTW, if cooking in a pan don'e use an aluminium pot, the acid in the rhubarb leaches the aluminium, and there is a possible link to alzheimers, or so I read. Also the acid in rhubarb can combine with milk solids if you eat a lot of cheese, and can cause kidney stones - my mum had that.

voyager 4 correct..rhubard with berries and currants tastes like the berries but you get more and rhubarb is much easier to handle than lots of black currants..or gooseberries

Yep, stew it with a small amount of sugar for about a hour, the concentrate can be poured off and makes a bloody nice cordial. Mixes well with gin.

cook together with strawberries and freeze. Delicious warmed and poured over icecream during the winter months.
