Share your tried and true favourite TM recipe

before we lose the site on Feb 26th.
It is fitting to kick off with a recipe from Toadfish who (along with several other people) have contributed so much to this site.

DIVINE GREEN DIP - with thanks to "toadfish"
1 Cobb Loaf
1 onion
¾ cup mayonnaise
1 tsp curry powder
1 cup grated cheese
250g cream cheese
¼ tsp basil
4 silverbeet leaves, cooked and well-drained
Cut the top off and hollow out the Cobb loaf, keeping the bread to cut into small serving-sized pieces for dipping.
Mix all the remaining ingredients in a food processor and then pour the mixture into the Cobb shell and place the lid on i.e. the piece cut from the top of the loaf.
Bake at 150°C for ½ hour. Serve warm.
Note from toadfish – “This is absolutely divine but the bread is not enough on its own for dipping, so I always serve other things e.g. Snax crackers, finely sliced French bread…..I have also done in it in small rolls for individual dips and my Aunt has served it up as a Vegetarian meal, 1 dinner roll with filling and lots of chopped up vegetables for each person.” :-))

Slice or Pudding.

3 Apples peeled cored and diced small 1cm.
2 cups self raising Flour
1 cup sugar.
Toss the cubed apples in the flour and sugar.
Mix with 125 grams butter or marj with 1 egg and combine with the above.
Bake 30 to 40 min in a lined slice tin at 180.

Enjoy.

Meatloaf with BBQ Sauce.

500g mince, 450gm pkt. sausage meat, 1 cup fresh breadcrumbs, 2 chopped onions, 2 tsp curry powder, 1 large clove crushed garlic, salt and pepper, 1 egg.
Combine all in a huge bowl.
Gradually add ½ cup milk and ½ cup water, beat until smooth, place into a greased roasting dish shaping it like a loaf. Bake in oven 180ºC for 30 minutes.

Pour off surplus fat and then add BBQ sauce made as follows:
½ cup water ¼ cup Worcestershire sauce
¼ cup brown sugar 1 oz butter
½ cup tomato sauce 2 Tbsp vinegar
1 tsp instant coffee 2 Tbsp lemon juice

Combine all ingredients in a pot, bring to the boil slowly, reduce heat and simmer for 5 minutes.
Pour over the meatloaf and baste frequently. Continue cooking, uncovered, for 45 minutes.

......and .....The famous rice salad from toadfish
Brown Rice Salad - One of the Best Rice Salads ever!
1 cup brown rice, 1 ¾ cup water, ¼ cup soy sauce (light if available), ½ onion finely chopped, Cook the rice in the water & when cooked & still hot add the soy sauce and finely chopped onions let cool (a couple of hours preferably overnight) Add the following ~ 1 red pepper chopped 1/2 cup roasted peanuts chopped 1/2 cup each of roasted sunflower and pumpkin seeds and sultanas. Dressing: 1/4 cup olive oil 2 Tbsp lemon juice 1 tsp grated lemon rind 1 clove garlic crushed 1 tsp fresh ginger 1 tsp honey. Mix and pour over salad.

This is by far the best cheesecake recipe!
I would never make another recipe, try it!

Cheesecake
This is a great basic cheesecake recipe, the texture is perfect and it works well with any additions. Anyone who tastes it will ask for seconds, it is delicious.
CRUST
 2 cups / 180 g graham cracker crumbs
 113g butter, melted
 2 tablespoons sugar
 1 teaspoons vanilla extract

CHEESECAKE
 680g cream cheese
1 cup sugar
 3 large eggs
 1 cup heavy cream
 1 tablespoons lemon juice
 1 tablespoons vanilla extract (or the innards of a vanilla bean)
 1 tablespoons liqueur, optional, but choose what will work well with your cheesecake
DIRECTIONS:
1. Preheat oven to 180C . Begin to boil a large pot of water for the water bath.
2. Mix together the crust ingredients and press into your preferred pan. You can press the crust just into the bottom, or up the sides of the pan too - baker's choice. Set crust aside.
3. Combine cream cheese and sugar in the bowl of a stand-mixer (or in a large bowl if using a hand-mixer) and cream together until smooth. Add eggs, one at a time, fully incorporating each before adding the next. Make sure to scrape down the bowl in between each egg. Add heavy cream, vanilla, lemon juice, and alcohol and blend until smooth and creamy.
4. Pour batter into prepared crust and tap the pan on the counter a few times to bring all air bubbles to the surface. Place pan into a larger pan and pour boiling water into the larger pan until halfway up the side of the cheesecake pan. If cheesecake pan is not airtight, cover bottom securely with foil before adding water.
Bake 45 to 55 minutes, until it is almost done - this can be hard to judge, but you're looking for the cake to hold together, but still have a lot of jiggle to it in the centre. You don't want it to be completely firm at this stage. Close the oven door, turn the heat off, and let rest in the cooling oven for one hour. This lets the cake finish cooking and cool down gently enough so that it won't crack on the top. After one hour, remove cheesecake from oven and lift carefully out of water bath. Let it finish cooling on the counter, and then cover and chill in the fridge. Once fully chilled, it is ready to serve.

Use any biscuits you like for the base, just pick what works with your cheesecake.

Any other combinations you can think of are great too, this is a great recipe to be creative with

Best ever chocolate cake and so easy
"This recipe has been running on the board for years so it must be good
I make this once a week makes a small roast pan size cake."

3.5 c flour
3.5 c sugar
3 t/s Baking powder
1.5 c cocoa
1 cup oil
2 cups milk
3 t/s baking soda
1 t/s salt
4 eggs
1 teaspoon vanilla
2 cups of boiling water (added at end)

Put all ingredients (except for the water) in a large bowl mix well to a batter. add boiling water and mix till smooth bake in the over at 160 for 1hr. you can split the mix and make two smaller cakes or make 1 smaller cake and put the rest into muffin tins the choice is completely up to you. This is an excellent cake if you have a large family or just want to impress people. gets moister by the day so stays nice and fresh very similar to mud cake.

There are too many for me to single out any!
This forum has been my 'go to' for so many recipes - the only one that I can think of that was a 'never make again' was a pineapple lump sickly sweet slice thing. Not my style at all, but in saying that, others may love it.
Sooo, as we bow out from recipes - a huge thank you to all of those who shared some bloody great recipes.
Davidt4, Sam(from Lincoln) juliewn, autumnwinds - they are the stand outs - too many people to mention that I have collected recipes from & enjoyed but I have learned a lot & my repertoire of recipes has grown tenfold over the years that I have been here - I have so many recipes printed off & not all of my 'go to' recipes have been from the 'known names' on this forum - & I hope that some of my faves that I have contributed have been made & enjoyed.
I'm so sad that we won't be able to share for much longer - so a huge thanks from me for the things I have learned & enriched my (healthy) food journey easier. xxx

Thanks for the mention, samanya. TM recipes has been such an interesting forum, partly because of the recipes and partly because of the light it has cast on NZ food customs and domestic traditions.

Absolutely - thanks for your contributions - I always knew that I could trust your recipes, you obviously have vast experience of many ethnic cuisines & those of us who didn't, when we first came on this forum have learned lot from you.
