Lovely recipe for Moroccan chicken

Had this tonight, it was such a hit, I would like to share it.

Moroccan Chicken
Pre heat oven to 180 C
Spice mix
Half teaspoon each of black pepper, ground ginger, ground cinnamon
Quarter teaspoon each of ground cumin, ground coriander, cayenne
Scant eighth teaspoon ground cloves
Place 8 skinless, boneless chicken thighs into a baking dish, coat/brush all over with olive oil.
Sprinkle with the spice mix .
Bake, uncovered for 40 minutes

I didn't have any cayenne so put in paprika instead
Roasted potatoes at the same time as well.

Janeny1, that sounds great and such an easy recipe. I wouldn't worry too much, as Cayenne and Paprika are similar spices so to speak. That with roast potatoes sounds a great combination and you can even add a salad alongside. Sometimes you don't have to follow the recipe "to the tee" and you can experiment a bit. I love Middle Eastern and Mediterranean food, which is a healthy diet and such a change compared to our Kiwi diet of "meat and 3 veges). You will find a lot of recipes on Google. Also, look at "Tagine", which is a traditional Middle Eastern dish "slow cooked" in a clay pot. It will consist of lamb or chicken, with veges, herbs and spices and is absolutely devine. I have to laugh a bit, as the Tagine and that way of cooking has been around for centuries, however, our same version is the electric "slow cooker".

I have a tomato/cucumber salad recipe which has cumin in it So I mixed up this spice mix and used it instead - was really yum - put the remaining mix into an airtight container in the fridge - it won't last long
Edited to add I am the only one who eats this salad, so I make small quantities, which is why I had leftover mix.
