Egg in biscuit recipes.

What does egg do to the texture of biscuits? Am wanting to make oatmeal-bran biscuits and trying to decide if I want egg in them or not. Kinda imagine that egg will make them a bit hard and brittle. Would like a melt in my mouth biscuit.

I gives biscuits soft crumbly texture. Personally I replace eggs with condensed milk as I prefer the texture. It depends on what type of biscuit you are making. You can try it with eggs or without. Without eggs will be a shortbread and you may need to add more butter to compensate for the egg.
