Plum and ginger jam...

Bought a jar of this at a fair. really tasty.
Have plums to use up,tho they are a tad sour.
Would you use RAW grated ginger or the crystalised ginger.

Crystallized but if you cut up fresh ginger and cook it in a small amount of water with sugar it will be perfect.
