Courgette/carrot cake

#Post
1

I have a quick question about courgette cake. I am going to make a carrot cake but use a combination of grated courgettes and carrots. Will this work, or any tips/tricks? Also, can I make them in muffin tins rather than a big cake?
Iced with cream cheese icing of course!!

Update,
I made a double batch of carrot cake using half courgettes and half carrots cooked in muffin tin. Total success, except that I had to be on hand to control the rats, I mean kids and husband, from stealing them.

great ...because courgettes are more watery than carrots, I was going to suggest that maybe a wee bit of extra flour ...but it's great to hear that it turned out well.
My nieces & nephews love that sort of kai & I've found that the muffins freeze well, & thaw quickly, so there's always something in the tins ...so to speak.

Thank you for the answer, Samanya. I wondered about the courgetes being watery too, so I squeezed them to get a lot of the water out.
Our kids came for dinner last night (adults who don't live at home) and a number disappeared. The rest are now in the freezer for our lunches.

Courgettes make a very nice chokky cake too.
This is a recipe that I often use, substituting carrots when zucchini are out of season. An easy, no fail recipe and it cooks in the MW, very like a mud cake with less eggs. Used to make it for my Grandies when they were small, they loved it but had no idea that it contained the hated veges.

Chocolate Zucchini Cake
125g butter
3/4 cup sugar
11/2 cups grated zucchini
2 eggs
1/2 teasp each cinnamon & mixed spice
1/2 cup choc chips
3/4 cup cocoa
11/2 cups SR flour
1/4 cup plain yoghurt

Cream butter & sugar, add eggs one at a time and beat in between each egg. Add spices, zucchini, choc chips & yoghurt & mix well. Add cocoa and flour and mix. Put mixture into a prepared microwave cake pan. Bake in microwave on high for 8 minutes. Stand 5 minutes before turning out onto a cooling rack.

Thanks for the Choc/Zucchini Cake recipe Nauru. I harvested a huge zucchini today - way too much of it for one. Have been searching my recipe books - but there it is. Thank you.
