Delicious Gluten Free Friands

Made these yesterday. OMG they are moist and delicious i just had to share. Not like other gluten free cakes which i've never had any luck with. Does take a lot of eggs, but sooo worth it. Here’s another good gf cake

Banana chocolate yoghurt cake

100 g butter
1 cup sugar
1 egg
1/2 cup plain yoghurt
3/4 teaspoon vanilla essence
1 mashed banana
1-1/2 cups self - raising flour. can be gluten free
1/4 cup cocoa
pinch of salt
1 teaspoon baking soda
1/2 cup boiling water
Chocolate icing

DIRECTIONS
Preheat oven to 180 c

Beat together butter and sugar,add egg and mix well. Mix yoghurt and then banana and sifted dry ingredients. Stir through baking soda dissolved in hot water add 3/4 of vanilla essence. Pour mixture into greased, lined cake pan ( 22 cm ) . ( I use a ring pan ) bake for 30-40 minutes until cake test cooked.

Ice when cold

I made a banana cake with gluten free flower...its was pretty horrible to be honest.

Try another recipe
My DH makes a lovely GF banana cake using Edmonds banana sponge recipe and either Bakels or Edmonds GF flour.
When I make GF biscuits I usually add xanthin gum for a better result

It might be the difference between using gf flour, not gf flower?

I tried your recipe at #2 yesterday, and confirm it's great.....
(and I used erythritol, not sugar - and no flowers...)

Have you tried the orange almond cake? I make this for a GF friend. Have used oranges, mandarins, lemon and also cumquats. https://www.nigella.com/recipes/clementine-cake
