| I have a question for the bakers please. Why do my muffins not rise nicely to be rounded on the top? Instead they rise on one side only. But they are lovely and light & tasty and I often swap out the blueberries for raspberries/ apple chunks etc. They just don't look good :-) shepa1 - 2020-01-15 18:06:00 |
| Yes I'd try that, don't overmix them either rainrain1 - 2020-01-15 18:11:00 |
| Fan bake definitely gives an uneven rise for muffins - the inside rises too quickly and then collapses sarahb5 - 2020-01-15 18:16:00 |
| What temp are you baking at and is your oven fan forced? marcs - 2020-01-15 23:08:00 |
| HI, and thanks for the answers. I bake them at 180 degees. Not sure the difference between fan bake and fan forced? My oven is nearly 20 years old and the options are fan bake/classic bake or bake (as well as fast heat, grill etc) shepa1 - 2020-01-16 06:52:00 |

I would only mix the muffins till just combined. Floury lumps are OK. I just mix it in as I am scooping them out. I would use the bake function at 180c but this depends on the oven. If using fan forced they I would defiantly reduce to 170c or even 160c. I know my oven is hotter so I have it at 160c fan bake. Some muffins like to be baked at higher temp as well. marcs - 2020-01-16 21:41:00 |

| Overmixing the mixture makes flat muffins. andy61 - 2020-01-26 18:46:00 |
| Too much baking powder can make them not rise. Makes them too heavy. Use the amount the recipe states. craftylady1 - 2020-01-27 06:32:00 |
