1 | I made a Fig & Nut cake (recipe in AWW Italian Cooking Class) and it is almost as hard as biscotti and very dry. Recipe is 125g roasted hazlenuts, 90g slivered almonds, 125g dried figs, 90g dark choc, 125g mixed peel, 3eggs, half cup sugar and one an a quarter cups s-r flour. It said to cook for 1 hour - I did 30 mins and it was more than ready. Should this have had butter or oil in it do you think? It's expensive ingredients and sounded great, but I'm not sure what to do with it now, apart from biscotti! I know you clever bakers out there will have some ideas. 2 | You could turn it into a dessert: break into 2cm chunks and place in a baking dish which just holds it in one layer. Make a custard mixture of 1 c cream, 1 c whole milk, 3 eggs and pour over, leave for 30 min to absorb the liquid. Bake at 160C for about 45 min or until just set.
