Looking for a good way to cook silverside cheers

If you have a slow cooker the best......if wanting to use the cooked corned silverside as meat for salads or in sammies ...I take off the wrapping and give the meat a good rinse of all the bloody juice then soak overnight in cold water to remove the salt ...its easier to put salt on after but hard to take out...once that is done I use a bottle of gingerale (any kind) and 1 orange cut into quarters and place in SC and cook on low for 8 hours. Now if you want to have the meat hot still soak overnight then add vinegar malt brown sugar and water and cook the meat in that for 8 hours use some of the remaining liquid to make Mustard sauce from the Edmonds Book which I will post

Mustard Sauce

1/4 cup sugar
1 egg

Beat together and then add 1tbsp flour and 1 tsp dry mustard powder and pepper and salt to taste and a cup of the liquid that you and stir gently till mix. Heat until thickened

Aso if you don't have a SC can be done on the stove top , bring liquid and meat to boil then turn down to a simmer and cook for 3 hours,(don't cook on high meat will shrink to nothing and is often tough)

I do the same as petal has described, but I put a tabspn Golden Syrup & a clove studded onion (sometimes I just throw the cloves & onion in).

I put in slow cooker on an up turned saucer add about 1 cup of water and about half a cup of malt vinegar on low for 8 hours

Clean under cold water. Chuck in large pot with enough water to cover. Bring to boil. When boiling and you can see lots of white in the water, remove from heat. Discard water. Fill pot with water (enough to just cover meat) and put on element. Slice garlic into slivers, and using a knife, insert all over the meat. Put back in pot, followed by two large onions roughly chopped, 1 tbsp golden syrup (or a 1 tbsp raw sugar), and healthy slurp of malt vinegar, and 1/2 tsp pickling spice with a couple of cloves in it. Very low simmer for a couple of hours. Let it rest after removing.

I hope your Corned Silverside is Home Kill or from a reputable Butcher.
The rubbish sold in a type of Vacpac sold in most Supermarkets is an absolute rip off. Take the weight off the Supermarket pack, wash it to get the slime off it, cook it in your slow cooker, cool, drain, then weigh it and see what you have ended up with. SBA.
I have tried a few brands and by far the worst are AFFCO (aka Talleys)

SC(old crockpot) Bay leaves and something sweet. Maple, golden, honey or brown sugar.Throw in potato, kumara, carrot, pumpkin(and cabbage when it has an hr to go)

I always do silverside in my crockpot, adding as others have said, vinegar, brown sugar, mustard powder, whole cloves and a bay leaf, and covering with cold water.
It turns out delicious every time.

Cook mine in crockpot with Bay leaves, Pepper corns, Onion, Brown sugar. I don't like it hot, leave in fridge over night then slice very thin. Yummy.

Microwave corned beef
1.5 kg piece corned silverside
1 T brown sugar
1 T white vinegar
1 onion, cut in half
4 whole cloves
6 peppercorns
1 bayleaf
5 cups water
Rinse beef in running cold water and place in a 4 litre casserole dish
Add remaining ingredients Cover and cook on Hi for 10 minutes.
Turn meat, cover and cook on 30% power for 75 to 90 minutes.
Stand corned beef in cooking liquid for 10 minutes before carving
NB may need 10-15 minutes more at 30% power, depending on shape and size of the meat

Alternative easier version
Rinse meat, place in large casserole dish
Pour in a bottle of lager, top up with water to cover meat.
You can add the cloves,peppercorns and bayleaf if desired
Microwave as above

The best corned beef in Auckland comes from Ellerslie Meats (the organic butcher shop) The lambs fry is to die for as well.
