5 | jaybee6, it sounds to me that you have too much moisture between your cake and the almond icing so the almond icing is melting and leaking. After 35 years of cake decorating I have found the following things out 1- if your cake is quite moist on the outside you can sometimes get away without adding anything to cake, to make icing stick 2- it depends on what the jam was, as most are not suitable, jam is usually used to add flavour as well, but if you don't like too much sweetness not so great. 3- Egg white does work but you have to make sure it doesn't dry out before putting the almond icing on. Is good to use between the almond and the top icing. Used to use it all the time. 4- For many, many years I have used just cooled, boiled water and it works fantastically. 6 | One thing I have used is a little bit of sugar added to some boiling water. Have been making the same cake for over 40 years and decorating it for Christmas, weddings, 21sts etc. This year the leaking is the worst I have known. 7 | Are you using too much jam? I only use a tablespoon or so of warm jam, and rub it all over the cake with clean hands, I have never seen any leakage from the icing layers. articferrit - 2019-12-30 07:33:00 |
