Absolute novice as I've never liked them but now have to up my game for a very good friend. Crisp outside and chewy in the middle please if possible. suzanna - 2019-12-17 17:10:00 |

3 | 1 egg white at room temperature 1 cup white sugar 1 teasp vanilla essence 1 teasp white vinegar 2 Tablesp boiling water 1 teasp baking powder Preheat oven to 125dC Line oven tray with baking paper Place egg white in a small mixing bowl preferably stainless steel or crockery, not plastic. Add the sugar, vanilla, vinegar and boiling water. Beat briskly for 5 minutes. Fold through the baking powder. I divide up the mixture into 4 bowls, and colour it whatever takes my fancy Place heaped teaspoonful on an oven tray. Bake 1 1/4 to 1 1/2 hours. When cold carefully peel of the paper. Sandwich together with whipped cream I made two separate batches of this recipe to get enough for us. I had meringues topped with cream and dried raspberries as part of a Christmas morning tea at work and was thinking of making them instead of pavlova this year. sarahb5 - 2019-12-18 07:20:00 |

....not sure how you measure egg whites. HOW many eggs would it be.thx To measure egg whites by weight, just place a bowl on your scales, turn on scales so they register zero, then add egg whites until the scales show close to the weight you want. Adjust to the exact weight by beating a further white and spooning it in until the exact weight is reached. An egg white weighs approximately 40g but this varies a lot. That is why it is best to weigh them or measure by volume. davidt4 - 2019-12-18 08:41:00 |

I don't know why they would spread, i don't use castor sugar either, and I beat only for the 5 minutes, then in the oven they go, made them 4 times, no fails....yet! ....not sure how you measure egg whites. HOW many eggs would it be.thx It gives the sugar to egg white ratio in the recipe so you just separate as many whites as you want to use into your bowl and then add the sugar according to the weight of the egg whites sarahb5 - 2019-12-18 13:26:00 |

18 | rainrain1 - Meringue Queen- your recipe is a winner so thanks for sharing. I followed it as written - only 1 egg white and ordinary sugar beat 5 minutes- quick and easy success so a convert to meringues. Next batch I will hit the colour charts for that extra touch of high tea glamour. Merry Christmas to you and yours. suzanna - 2019-12-19 07:09:00 |

21 | Rainrain, I too have never thought of making coloured meringues. Made them last night and they are brilliant, thank you so much. The local plumber received them this morning for himself and his family. Will be making more, they look so pretty. dansac - 2019-12-19 09:37:00 |
22 | Has anyone been able to make these successfully in a bench top oven? I have tried pavlova and it looked great but was sticky in the middle. jan2242 - 2019-12-19 10:06:00 |

29 | I made some lovely ones using enough red colouring until they were a lovely pink and put in rose water and chopped turkish delight and they were a HUGE hit. Meringues are so cool and easy to make - even when they don't turn out perfectly. bisloy - 2019-12-22 15:43:00 |
