New World's Thai and Kumara Salad

I love this and would love to start making it myself, just wonder if anyone would have the receipe for this?

I have new tried it but liked the sound so googled it and found this
NW thai kumara salad. I will be giving it a go.

500g of red kumara peeled and chopped into 2cm chunks and 300g carrots chopped into 1 cm chunks. Boil these until tender (I roasted them), 1/2 small red onion finely chopped, 1 garlic clove, crushed, 1 tsp chilli powder, 1/2 tsp ground cumin, 1 tsp curry powder, 1 tbsp honey, 2/3 cup canola oil and a small tin of crushed pineapple in juice (include the juice), handful fresh coriander leaves, chopped roughly, salt and pepper.

I have a Thai spice blend which has cumin in it and so has my Thai curry powder.

I enjoy Thia food and realise that thai curry is generally limes, curry paste, lemon grass, coriander, coconut cream/milk. BUT OP asked for the New World recipe. so that is what I googled it and recipe posted is what google came up with.

Feel free to help her with a recipe if you like.

Thanks for that, I’ve made it but it’s been a bit ordinary. It will be the pineapple that lifts it, don’t know why I didn’t think of it myself.

Variations
Ingredients

Purple Kumara
2 Carrots
1 Tablespoon Oil
1 Tablespoon y Honey
Salt & Pepper
2 Spring Onions
Mint Leaves
2 Oranges

1 Tablespoon Wholegrain Mustard
1/2 teaspoon White Wine Vinegar
1/2 teaspoon Oil

Peel and dice the kumara and slice to 3cm or 1 inch pieces
Peel and slice the carrots to 1 cm pieces
Add these vegetables to the baking tray and drizzle with oil and honey and carefully mix until fully coated
Season lightly with salt and pepper
Bake for 20-30 minutes, stirring gently every 10 minutes or so to check on them.
Bake until just cooked through and starting to caramlise and remove from the oven and set aside.
Finely slice 2 spring onions
Finely slice up to 3 tablespoons of mint leaves
Add the baked vegetables to a medium bowl, add spring onions and mint to this and stir gently.
With a sharp knife peel the orange skin and slice the orange in half then cut into 1/2cm slices and gently stir this through the vegetables

In a small bowl combine the wholegrain mustard, white wine vinegar and oil and pour this into the vegetables and gently stir to coat.
