Corn fritters

Found a recipe for corn fritters with avocado puree on top and a prawn on top of that. Wanted to serve as an entree but can I make the fritters the night before and then cook the prawns Christmas morn when needed and warm the fritters? Or will they go soggy?

no dont think so i have made plain ones and any left over have been ok the next day

They will be good made the night before, often fritters taste better rewarmed next day, especially seafood.

On the day I would lighty dust the fritters in cornflour or rice flour and refry them in some medium / hot butter.they will come out nice and crispy.

I just rewarm them in the microwave if you want them hot usually I just serve at room temp and think this would be better for prawn and avo topping. Have the prawns cooked in advance and just assemble at the last
