Suggestions needed for Christmas lunch please.

I have somewhat of an unexpected conundrum of my hand, can you help with any suggestions? My daughter and husband arrive from Australia next weekend, they will then be travelling south, coming back on the day of Christmas Eve. My elderly mother is driving up from the BOP Christmas morning. I am physically unable to provide any help food-wise. There will be 6 people here for lunch, including family members I have just mentioned. Can you suggest a way of providing a simple but delicious cold lunch on Christmas Day. We all love salads. I fear I may be asking the impossible.

I should have added that cooking here is out of the question. A tough one. It would probably be good to mention that my daughter & son in law will not be staying here on Christmas Eve, they will have access to kitchen.

What about ordering everything from the supermarket to be delivered the day before xmas, lettuce, peppers, salads, croissants, pav, cream, salami, ham, cheeses, crackers, olives, gherkins, sun dried tomatoes, hummus, dip, dried fruit, nuts, fresh pineapple, raspberries, grapes.

Why not buy in sliced ham and a couple of rotisserie chickens and get your mother to cook up some new potatoes and get her to bring them with her. then all you need to do is to pull the salads together - potato salad, green salad, and as mentioned above get it preordered and delivered. Could she also boil up a few eggs for the salad? Obviously also the dessert as well. Could your daughter make something the night before such as a jelly and have a platter of fresh fruit and cheese? Just make sure the order to the supermarket includes everything you need.

I was going to put a cold meat/cheese/fruit platter together. The day before I am going to cook a chicken roll (stuffed with stuffing, no bones) slice it up cold the next day. Will also put together a meat, cheese and dried fruit platter with crackers and dips. Bread rolls and salad on the side. Meat can be ham, salami, or anything that can go on crackers or sandwich. Of course slice up the cold chicken.

Go to the supermarket and buy a deli platter, they have a selection for xmas.
