Does anyone have salad recipes apart from the common lettuce etc salad.

Asparagus and Bacon Pasta Salad
400g risoni/orzo
1 bunch asparagus
250grms streaky bacon
100g baby spinach
200g cherry tomatoes
2 avocados diced
2 spring onions
50g pine nuts toasted
50g fresh Parmesan shavings

Dressing
50g pesto
50mls olive oil

Cook risoni.
Slice asparagus into 3, then boil until cooked.
Grill bacon, and chop into pieces.
Assemble salad on a large platter, starting with the risoni, stir through baby spinach. Top with cherry tomatoes, asparagus, avocado, bacon,spring onion, and toasted pine nuts. Add Parmesan.
To make dressing, whisk pesto and olive oil. Pour over salad just before serving.

Pearl/ Israeli Couscous salad

Cook couscous and cool.
Add
Chopped cucumber
Chopped tomatoes
Parsley
Corn
Raisins or craisins
Toasted pine nuts or slivered almonds

Dressing
1/4 cup olive oil
1 tsp Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2-4 tablespoons fresh lemon juice depending on your taste

Mix altogether.

Silverbeet Salad
De-stalk silverbeet
Lay leaf halves on top of each other, roll up tight. Slice finely.

Dressing
1/3 cup olive oil
1/4 cup tomato sauce
1/4 cup sugar
1 tbsp Worcestershire sauce
2 tbsp vinegar
1 tsp nutmeg

Garnish with -
Pine nuts
Pumpkin seeds
Avocado
Cherry tomatoes
Crispy bacon
Craisins
Or whatever you like.

Zesty Slaw
1/3 cup best foods mayonnaise
1/2 tsp sesame oil
2 tsp lemon juice
1 clove garlic
4-5 cups finely sliced cabbage (purple savoy)
1 grated carrot
1/2 cup chopped parsley/mint/coriander
1/2 cup roasted peanuts - chopped

Mix mayonnaise, sesame oil, lemon juice and garlic together.
Toss through other ingredients.

If you type "salads" in search, there is a Christmas salad thread, that probably has over 100 salads.
But there is only 1 salad that you can make at this time of year, that you can't make all year and that is the Strawberry, asparagus & avocado salad.I'll try and post the recipe if I can find it.

Strawberry ,Asparagus & Avocado Salad.
Equal amouts of all 3. Blanch the asparagus and I cut into 3's. Use an avocado that is just going soft, peel,quarter and dice.(dip in lemon juice to stop from going brown) Remove the green hulls from the strawberries and 1/2 or 1/4 them depending on size. Pile on a serving plate and drizzle this dressing over.
Dressing: 1/4 cup avocado oil, 1 lge clove garlic crushed, 3 tblsps lemon juice, freshly ground salt & pepper to taste, handful of freshly chopped basil. Whisk together.
I never ate avo's until I made this salad. Now it's a staple summer salad

Red salad.
Slice the following: tomato,radish,red capsicum,red onion.
Throw in a bowl with a tblspn of brown sugar and 1/2 fill the bowl with white wine vinegar. Mix together. Stir the ingredients through every so often to make sure it all marinates.

Pasta Salad(curry flavoured)
This is the only time I eat curry.
Boil a pkt of pasta as per directions. Rinse and cool slightly.
Add the following: Sliced green or red capsicum(red ones are usually in the preceeding salad and green give a nice colour variation) 1 of usually. Sliced ham, sliced or after Christmas, diced(you don't have to put this in if you don't want)
Sauce: Tblsp hot curry powder(don't worry, it won't be that hot in the end & if you like it hotter, just add more)
1 tblsp castor sugar, 1/4 cup oil(use nice oil) 1 tblsp whit vinegar. 1/2 cup cream(if you don't have cream, just use mayonnaise & less oil)
Combine all the ingredients and enjoy.
I can usually make all these salads by the time the pasta has boiled

How about something with mint? Never made one with mint in it but have eaten them before and never taken much notice of what was in them apart from enjoying the mint in them.

This is one I'm making this year.
Green Bean & Asparagus with Tahini Lemon Drizzle
1/2 Tbsp sesame oil
250g green beans (trimmed)
250g asparagus (trimmed)
Salt
1/4 cup sliced almonds
2 rashers of streaky bacon, cooked until crisp
Tahini Lemon Dressing
2 Tbsp tahini
3 Tbsp lemon juice
2 cloves garlic, crushed
3 Tbsp water, approx

1. Heat oil in a large frying pan. Add the beans and asparagus. Stir fry for 3-5 minutes over a high heat until tender crisp. Season with salt.
2. Meanwhile, make the tahini lemon drizzle. In a small bowl, whisk together the tahini, lemon juice, garlic and enough water for a drizzling consistency. Set aside.
3. Arrange the cooked vegetables on a platter. Coat with the drizzle, scatter the almonds and crumble the bacon over the top. Serve hot or cold.

We did the watermelon, feta and cucumber salad this year, as well as
Thinly sliced oranges layered with sliced radish...both were very refreshing and went down a treat.
