1 | I had prepared the fruit mince with lots of brandy ready to cook the next day but my back gave out and I haven't been able to stand too long at all, (6 discs in back collapsed) why I decided to do my first ever xmas cake at the age of 63 dumbs ass idea. the mix has been in the fridge for 2 weeks, can I cook it, I can't give it to the birds :( jude164 - 2019-12-12 19:26:00 |

9 | I would take the mix out of the fridge overnight to give it time to reach room temperature, otherwise the chilled mix will effect the quality of the cake and it could end up under cooked. calista - 2019-12-13 18:09:00 |
10 | I knew this was a dumb ass idea, firstly recipe - cream butter and flour, me reading how much butter and how much flour.. recipe listed 250 gms butter, next on the list of ingredients 4 eggs......ok 250 gms butter and four eggs into the mixer, kinda curdled, ok me - butter out all day and too hot for it so mixture dumped into the bin, shit needs orange, none here as I had eaten it so off to the supermarket to get an orange, back to the kitchen and new mix of 250 gms new brought butter and 4 eggs, friggen same thing, by this time I am pulling my hair out, read the recipe again - ping OK so 250 gms butter and then WAY down the list friggen flour....in the meantime I am cooking dinner and struggling with my back....done and in the oven but I forgot to butter the sides of the baking dishes, now feeling pretty happy Calista says I should have room temperature the fruit mince...WEEP lol BUT on top of that I had miss read that you should add a bit of brandy to the mix every so often, I think the brandy bottle is now 3/4 empty pmsl..
