Make jelly and wait till its the consistency of unbeaten eggwhite and then dip cubes of sponge in it and place
dipped cubes of sponge in a bowl. Place well drained fruit on top. Leave in fridge till set then cover with custard and when custard is cold, cover with whipped cream and fruit or whatever you like on top. Its a simple get delicious recipe.

I like the jelly soaked sponge so I bung the fruit and sponge in together then pour the jelly over the top. When it is a bit firmer than egg-white I give it a gentle fold so there are chunks of jellied fruit and sponge. I also add the alcohol before I stir it. Custard and cream it as malcovy explains above. Crushed Flake is good on top too.

I lightly spread sponge with strawberry or raspberry jam what ever you prefer. Break into pieces and place in the serving bowl sprinkle over 3 Tblsp of sherry (optional) add 1/2 can of fruit salad and sprinkle over some of the juice.Make up strawberry or raspberry Jelly. Let cool and pour over sponge.Let set overnight in fridge.
Make custard according to directions I cook mine in the microwave add an extra Tblsp of custard powder and a tsp of vanilla essence for extra flavour and to thicken. Once custard has cooled put on set jelly. Place back in fridge. When custard has set add whipped cream decorate with strawberries and choc flake.

This morning, I was reading a Nadia mag, and it was a trifle recipe.
You put the jelly in bottom, let it set, then the sponge etc.
I may now try that one, and wondered if after the sponge you could put another jelly on top

I use a 2 pack bought round sponge, put 1 sponge in the bottom of a glass bowl, make a jelly and pour over the sponge, let it set, most of the jelly soaks in, cut up the second sponge and put in random placed pieces for the second layer, put the fruit from a tin of fruit with it, make up a different flavoured jelly with hot water and the juice from the tinned fruit, pour over the set base slowly you should be able to see what colour the jelly is in the gaps. set and make custard and cream and layer. I have used chocolate sponge and a chocolate mousse instead of custard and that works well too.

If people have bugger all coin this Christmas they should check out the bakeries to get off cuts of sponge. We got quite a big bag (fresh) for $2 for the trifles.I just find that I have to use two packets of jelly as the sponge soaks much of it up
