Alison Holst Xmas cake recipe

#Post
1

Peter's 5 egg Xmas cake - which was recommended on a previous thread -have just made this today but noticed there was no baking powder or b/soda and am now wondering if this is right. Has anyone made this recipe and have it turn out ok without those 2 ingredients as I've checked other xmas cake recipes and they all included one or the other or both. Mine still has 3 hours cooking time to go so cant tell how it will turn out.
thanx Sue (Mrs Lofty)

With her Pineapple Cake recipe there is no baking powder or soda, although she says you can add if it makes you feel better. i have been making that recipe often, for over 40 years and never added a raising agent.

will try .. but only if it looks respectable LOL! One thing is the recipe says its a "dark' cake so I was expecting something along the lines of the dark (really dark") xmas cakes you can get at supermarket bakery which it isnt..

I have been tempted to make this cake for several years, but I usually bake Alison's easy mix rum and raisin one instead because I know that the blokes I bake for really like it. I think it's a bit boring myself and prefer her diabetic one as it has a kilo of dried fruit, and you can choose the mix yourself _ I only hope I can find the recipe this year.

You could send us all a slice to test if you can't post a picture.

I'm not brilliant with technology either. A friend calls people like us "technopeasants"
