Peppermint creams

I have been asked to make peppermint creams for a work lunch, but I cannot find my recipe.
I have had a look on google and there are a thousand recipes. Some beat the egg white, some don't. Some have lemon juice, others don't.
Anyone have a tried and true recipe that they could kindly share please?

Not tried and tasted by me, but is an Alison Holst recipe.

25g butter
1/4C sweetened condensed milk
1/2tsp peppermint essence
About 2 cups icing sugar
Green food colouring (optional)

Have butter soft, but not melted. Mix first four ingredients in medium-sized bowl or food processor, adding enough icing sugar to form a firm paste.
Colour half green, if desired.
Form one or two rolls, press together for green/white roll, wrap in plastic then chill till firm.
Cut in slices or roll in balls.

Variation: Dip in melted chocolate if desired. Store chocolate coated peppermints at room temperature, but in coated creams in refrigerator.
