Need a banana cake recipe

That will keep one or two days or freezable but nice when thawed and suitable to ice for birthday and yes I have searched.

This is my FIL's recipe so very old. I freezes well however ice it after it has been defrosted. Use whatever icing you prefer.

Banana Cake

125gr butter
175gr sugar
1 tsp vanilla extract
2 eggs
3 mashed bananas (riper the better)
1 teaspoon bicarbonate soda
2 tablespoon boiling milk
1 teaspoon baking powder
225gr flour

Cream butter and sugar, beat in vanilla add eggs, mashed bananas, then bicarbonate soda dissolved in the boiling milk.
Lastly add flour and baking powder previously mixed.
Bake in 2 greased sandwich tins or 1 cake tin for 20 to 30 (if making in one cake tin, 20cm, bake for 50 mins) minutes at 180ºC (160c fan forced) Best iced with lemon icing or your choice.

Agree. Only banana cake I make now.

Another vote for Annabel Langbein's cake. I recently made it and divided the recipe between two ring tins. Froze one. The recipe freezes well, is not a crumbly cake, and as with all banana cakes works best with very ripe bananas.
