Shortbread biscuits

I make them every year but I find the shop bought ones are a bit lighter in texture. I have made them both with corn flour and rice flour. I prefer the one corn flour and icing sugar. Does anyone add a pinch of baking powder to their shortbreads. Does it make it a little bit lighter?

I use the cornflour & plain flour recipe. I find if i poke them with a fork before cooking, it makes them lighter

I use the standard Edmonds recipe - I cream the butter until it’s almost white and it’s always very light with the cornflour/plain flour combo but will be making it with coconut flour this year to be gluten free. I usually would add a little semolina for extra crunch.

I’ve made some gluten free shortbread biscuits today which I plan to sandwich together wth buttercream - not sure what flavour would be Christmassy though, maybe mint or vanilla with sprinkles or just red or green colouring?
