Hi Guys,
Can someone help me, Im looking for a light, soft fruit cake recipe like the Pak n save one. Thanks

Farmhouse Sultana Cake

500 grams sultanas
250 grams butter
1+1/2 cups sugar
1 cup oat bran
2 cups flour
2 tsp Baking powder
1/4 tsp salt
3 eggs beaten
1 tsp vanilla ess
1 tsp almond ess

Preheat oven 175dC
Place sultanas in a saucepan, cover with water and simmer 5 minutes. Drain.
Add butter and sugar to the fruit and mix until butter has melted.
In a bowl mix together the oat bran,flour, baking powder and salt.
Add the beaten eggs, drained sultanas and essences. Mix well.
Spoon the batter into a greased lined 20cm cake tin.
Bake for one hour. Turn down the oven to 130dC and bake a further 35 minutes.

just made a fruit cake yesterday same ingred except the oat bran very dark and heavy

Oh dearie me! We like this cake, and I have no idea what the pac n save cake is like to compare. Could be a bit heavier than what op was wanting, but hey, god loves a trier, or so they say.

i do have that recipe where you boil water and ad cornflour that is a pale colour but feel it is dryish compared to the above
