Keto date muffins [makes 6 in a ; 3 muffin cooker]

Keto Date Muffins.

100 grams Almond flour
100 grams Mozzarella cheese and Almond flour
1 Tablespoon of Coconut flour
1 teaspoon of Cinnamon
1 heaped Tablespoon of Splenda
1 & 1/2 teaspoons of baking powder
2 large eggs
2 Tablespoons of oil
3 Tablespoons of Almond milk
1/4 teaspoon of vanilla
Mix well.
Put rounded Tablespoon in each cup
Bake, 12 minutes, may need a few more seconds,
cook the second batch.

Have you mixed up two different recipes?

Mozzarella with a sweetener (splenda)!
No dates!

thanks buzzy110, a slip on my part.
I used 9 dates , each chopped into 6 pieces.
Yes the mozzarella in these is ok. The texture is perfect as far as a muffin goes.. I will be making a few more muffins using the same base recipe. It did require a few tweaks, from the original muffin recipe, to get them right.
