Does anyone have a fail proof Cinnamon Oyster recipe they would like to share please?

macandrose, here are some recipes from the former TradeMe Cooks.....
"I am famous for my cinnamon oysters in fact it goes as far as Australia that I am the queen bee of cinnamon oyster making!! 4 eggs, 1 dsp warm golden syrup, 6 Tblsp sugar, beat together until thick and creamy then fold in following sifted ingred. 4 large Tblsp flour, 1 tsp B soda, pinch salt, 2 tsp cinnamon, 2 tsp ginger. Put in well greased patty tins (or cinnamon oyster tins) and cook 8-10min at 180. Halve and fill with cream when cold and sprinkle with icing sugar. Happy baking.

Cinnamon Cream Oysters
2 eggs, 75gr sugar, 1dessertspoon golden syrup, 50gr flour, 1tsp cinnamon, 1/2tsp of ground ginger, 1/2tsp baking soda. Beat eggs & sugar until thick. Add golden syrup, beat again, fold in sifted dry ingredients. Small spoonfuls. Bake 12 mins @ 200. When cold, split & fill

Cinnamon oysters
2 eggs 45g caster sugar 2 tsp golden syrup. 60g flour 1 tsp cinnamon 1/4 baking soda 1 tsp ground ginger Preheat oven to 180C. Lightly grease 12 patty tray with butter, then sift a mixture of 1 tbsp flour and 1 tbsp caster sugar over it. Turn the tray upside down over the sink and tap it to remove excess. beat the eggs, adding sugar gradually until mixture is extremely light and fluffy. Pour in the slightly warmed golden syrup and keep beating for at least another 5 minutes. Sift dry ingredients, onto egg mixture, and fold in very gently using a large metal spoon . Spoon mixture into prepared tins and bake for 8-10 minutes. Remove from oven and leave to cool for a couple of minutes until the mixture shrinks away from the tins a little. Cut a slit in the side of each cake with a small serrated knife, and spoon or pipe in some whipped cream. Dust with icing sugar and serve. You can freeze them quite successfully, cream and all.

awww my mum always made these for "do's" really popular she was! hers came out of the Edmonds cookbook. She wouldve made 100's over the years bless her
