Glacé fruits

#Post

Hi, I’m after some glacé fruits, not dried fruits. I recall years ago when Sanitarium used to have retail shops their range was quite sophisticated to a child’s eye, but they did have the most marvellous range of glacé fruits. Perhaps there is no calling for it now, was a special treat at Christmas. I’d be grateful if anyone could help. Thank you.

I haven't seen them for yonks, and used to love them too, but although it takes time, it's possible to make them yourself.

Some good sites:

p

(uses corn syrup)
https://www.justapinch.com/recipes/dessert/fruit-dessert/how
-to-make-candied-fruit.html

(uses honey)

I've used both of those recipes, think I like the first one best (could be the honey I used in the second one was too strong)

Tip 1: as with sun dried tomatoes, I find that once the first parts have been done, a good cheap way to dry is to place on racks over baking paper in large roasting dishes, and leave in one's car on a hot day.....
(just watch where the sun is, as they can, in fact, scorch...)

Tip 2: It's so hard to buy good dried figs these days that I seasonally buy some, bake them in syrup with a touch of lemon juice, and then dry them. Lucious!

Thank you Autumnwinds for taking the time to reply in such detail, it has made most interesting reading. Yes glacé items seem to be a thing of the past, fashions in food come and go I suppose. Perhaps in the future they may reappear, I guess the glacé content itself could be a concern for some nowadays. I saw the request on here recently for a recipe for Cathedral Window Cake, my Aunt made wonderful ones, with glacé fruits, thus sparking my own enquiry. Thank you again.
