chicken breast quantities

I'm making stuffed chicken breasts tonight for guests, would you allow one breast each or half a breast? They are about 220gms each. They will be stuffed with cream cheese & spinach and wrapped in bacon.

Given the addition of cream cheese and bacon I think half a breast per person should be enough, a whole one per serving might be a bit gross. If you intend to slice the stuffed breasts for serving then maybe cook an extra one or two breasts.

Hmm I was going to serve whole but maybe sliced on a serving dish would be better? I'm not very good at slicing though!

I would slice and serve on a central dish for everyone to help themselves, it looks more generous and each person can have the quantity that suits them.

The breasts will be easier to slice neatly if you rest them in a warm place for about 10 minutes before slicing. Make sure the serving dish is hot then you don't have to worry about the meat getting cold as it rests.

I'd allow one per person, we like our tucker, as I'm sure others do. I'd be rather surprised if I only got served a half. I suppose slicing and serving on a central plate you could get away with, as long as there was plenty on the plate.

Ok I think I'll cook one each but serve sliced on a platter, then there will be plenty but people won't feel they have to over eat to be polite.

Resting - good plan never thought of that one!

....do you wrap them in tinfoil, or just on their own in roasting dish. thx
