Alison Holsts spinach and cottage cheese canneloni

Anyone have the recipe. I loaned the book to someone and they lost it. Can’t find the recipe online either. I have all the ingredients ready to go.

1 pkt cannelloni tubes

2 medium onions
4 cloves garlic
2 tbs oil
1 small green pepper
1 tsp basil
1/2 tsp thyme
1/2 tsp sugar
1/2 tsp salt
1 300g tin tomato puree
1 tbs vinegar
1/4 cup water

fillings
1kg fresh spinach cooked (2 cups when cooked)
1 cup cottage cheese
1 tsp oregano
1/2 tsp salt
1/2 tsp sugar
1/4 tsp nutmeg
black pepper
topping
1 cup cream cheese
1 cup grated cheese
chop onion and garlic, fry in oil, add pepper, add seasonings, then rest of sauce ingred, bring to the boil, then simmer.
boil spinach to wilt, drain.
chop spinach and mix with cottage cheese, add rest of ingredients.
butter the dish, fill the tubes using your hands,,
arrange in the dish and pour over the sauce.
shake to distribute sauce,
soften cream cheese, spread over the sauce mix, sprinkle grated cheese on top, 180* for 40 minutes.

I make unsweetened pancakes and roll the ingredients inside - much easier than mucking around with the tubes.

Similar level of carbohydrates? Could do similar with a tortilla.

I always use the recipe on the back of the cannelloni packet. Never fails.
