Curried Kumara Soup - advice please.

After a quick google all the recipes I can find for this have coconut milk in them which is added at the last moment. As coconut has unfortunate effects on my digestive system would substituting cows milk make much difference?

I'm getting a bit bored with bacon hock and chicken soup which are my usual standbys.

I make a Kumara Chowder that I put a small amount of curry in and add cream right at the end as well as milk. I don't particularly like the taste of coconut milk/cream for some reason but am fine with coconut.

This recipe Doesn't have milk in it.
Cow's milk, to me, wouldn't work, as the coconut milk thickens as well as adding flavour.

And looking at the new world recipe, they have used lentils to thicken.

calista, maybe you'd like to try this Alison Holst recipe......

CURRIED KUMARA SOUP
75g butter
2 garlic cloves
½-1 tsp curry powder
500g kumara
1½ cups water
2 tsp instant chicken stock
about 3 cups milk
¼ cup cream, optional - with the butter that the recipe has I have never found the need to add any cream

Peel the kumara with a potato peeler and slice 1cm thick.
Add the crushed garlic and curry powder to the butter in a large saucepan – don’t cook for too long at this stage as the garlic will burn and tends, then, to be bitter. Add the kumara and cook in the butter without browning, for 1-2 minutes, then add the water. Cover and cook for 10 minutes, until tender. Stir in the chicken stock, then puree the soup and thin it with milk. Add the cream and reheat without boiling.
Serves 4-6.
Variation: Replace kumara with the same weight of parsnip. Different, but equally delicious.
Note: This soup freezes well and if wishing to do so, then freeze just the puree in portions of desired size e.g. individual portions, then thin the soup portions as desired with the milk, and cream if using, just prior to reheating and serving. :-))

Sorry, I wrote a general "thank-you" to everyone who had posted a couple of days ago - then I must have deleted it, rather than posting it.

I think I made the Alison Holst recipe, but with parsnips, rather than kumara sometime in the distant past and really enjoyed it.
