I made my own butter!

I was given a litre and a half of cream that was leftover at work so I used about 500ml to make my own butter which is delicious - just like the Lewis Road butter - but what can I make with the buttermilk other than scones?

A buttermilk jelly might be nice. I have a recipe somewhere for milk jelly, which could be adapted - would you like me to find it?

I used to make butter from raw jersey cow cream. I saved up the buttermilk to put into smoothies made with frozen fruit and homemade yoghurt

i used to make butter on my grandparents farm when i was a kid. the butter milk was feed to the pigs for xmas hams.

Just beat the cream with my stick whisk until the butter and butter milk separated, added a pinch of salt and voila - butter - its delicious and free! I think I will use the butter milk to soak some chicken for fried chicken - I remember now seeing that on TV and I have some great seasoning too.

I don't have a waffle iron - I did consider making pancakes but I'm not very good at cooking them

Well it was free cream so yep, very good value

I have been using this recipe (link below) for pancakes made with buttermilk for years, super easy and a great recipe. I do cut down on the sugar as a little sweet for us

Yes it does - looks and tastes just like the real thing, very creamy

No. It is not cheaper. At least half of the cream is 'whey' and separates out of the butter during the making.

Sarahb4 didn't say so, but it is better to wash the butter then squeeze between butter pats to make it into a solid block and get out the remainder of the 'whey' and water.

That's because I didn't wash it and nor did I squeeze it between butter pats - just strained it through a new chux cloth and squashed it into a glass jar

If you didn't wash it and get the whey out...it will go rancid faster so use it quickly. I speak from experience

I have pretty much used it already - just for clarity though how do you wash butter?
