Please does anyone have a recipe for a nice simple Madeira cake? I had a recipe I got off here a couple of years ago but have sadly misplaced it. Thank you

This is a good one from the Australian Woman's Weekly I've used often.

MADEIRA CAKE

Ingredients
200 g Butter
1 cup Caster sugar
3 Eggs
1 Lemon
1¼ cups Flour
1 teaspoon Baking powder

Directions
1. Heat oven to 160 deg C fan bake. Grease 20cm round springform, ring (or Bundt) cake tin.**
2. Place butter and sugar in a bowl, then beat until pale and creamy. Break in eggs, one at a time, beating well between each addition. Stir in zest and juice of one lemon. Stir in flour sifted with baking powder.
3. Spread mixture in prepared tin and bake for 40 to 45 minutes or until a skewer inserted comes out clean.
4. Transfer to a wire rack to cool. Use the cake as a base to make a decorated novelty creation.

** If you don't have a ring or bundt cake pan, put a microwavable glass in the centre of a cake tin - this way the cake cooks more evenly, rather than being more brown on the edges.

I've never seen a Madeira cake made in a bundt or ring tin - you wouldn't get that classic split in the top would you?

As far as I know a Madeira Cake should be made in a loaf tin, the only way to get the proper split. A round or square tin is second best, but never a ring tin!
