This is the recipe I use with my cookie press, never had a failure. Classic Spritz Cookies These are an easy way to add variety to a tray of cookies. A cookie press lets you change disks to produce many different shapes. Serve them plain, sprinkled with decorations or sugars, frosted or dipped in melted candy! MAKES: 7 TO 8 DOZEN INGREDIENTS 1/2 teaspoon clear almond extract 1 teaspoon clear Vanilla Extract 3 1/2 cups all-purpose flour 1 teaspoon baking powder 1 1/2 cups butter (softened) 1 cup granulated sugar 1 egg 2 Tablespoons milk INSTRUCTIONS * Preheat oven to 350ºF. * In bowl, combine flour and baking powder. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add egg, milk, vanilla and almond extract; mix well. Gradually add flour mixture to butter mixture; beat until combined. * Do not chill. Fill cookie press with dough and with desired disks, press cookies onto ungreased cookie sheet. * Bake 10-12 minutes or until edges are very light golden brown. Cool 2 minutes on cookie sheet on cooling rack. Remove from sheet; cool completely. (You get to know the right stage of baking very quickly - these are paler than most cookies) Notes: * You can change the flavours, or add cinnamon or other spices, but the basic recipe is liked by most people. * I bought a large BBQ silicone sheet and cut it to the size of my cookie sheets, makes life easier. * After baking, I gently slide the cooked cookies onto clean newspaper - that soaks up any excess butter, and helps them cook more quickly. * You can add colour gel into coffee sugar, spread onto a plate to dry, store in a bottle, and sprinkle red or green sugar onto cookies for Christmas gifts. * With the cookie press disc with a hole in the middle, you can crush up "boiled lollies" (available for $1 a bag in "The Red Shed" and make "Cathedral window" cookies.
