what goes with porridge

just had some for tea and tried to make the 2nd bowl more exciting with banana but I don't think it worked that well.

one of my older uncles always put a big blob of butter on his,nothing else, ate it winter, summer, all year round. He lived till 95ys, so the butter mustve helped.

As I have been put a diet I can not add much. I get rolled oats (the chunky kind) I make 25g of it. I add 1/2 cup skim milk, half cup almond milk, sprinkle of cinnamon. Put it on the stove on lowest heat for 20 minutes. While that is cooking I have a cup of tea or have a shower. Take it off the stove and add 10 sultanas chopped up. Sometimes I will add a couple of walnut or pumpkin seeds. I keep it simple.

Those wee flavour packets, I just mix with boiling water and eat without adding anything else.

That's a lot of liquid - I use 1/3 cup rolled oats (not the chunky kind - don't like them), 1/3 cup milk, 1/3 cup water. Soak it overnight, cook for 2 minutes in the microwave next morning. Add vanilla essence for sweetness but you can use sugar free Queen maple flavoured syrup. Then you can add your seeds and nuts if you want to - if it's too thick then I thin it down with boiling water.

You don't seem to get much in those and they're full of sugar too.

I mix my oats with Hubbards fruitful breakfast and usually add a banana.
Usually just cover with boiling water and microwave for 2 mins.

Considering porridge makes a basic base for a dessert there are lots of things that go well in porridge:

Salt
Butter cream milk yoghurt
Sugar - brown/raw/coconut/palm, maple syrup, golden syrup, molasses, malt, glucose
Dried fruit - sultanas, raisins, currants, cranberries, dates, etc (can be soaked overnight as well in fruit juice, milk, rum, brandy, ginger wine or whatever
Dehydrated fruit and fruit powder - Lots of options there
Essences - vanilla, or any of the commercial essences. You could make your own using lemon, cinnamon, cacao, coffee beans, etc and vodka
Seeds - pumpkin, sunflower, sesame, chia, linseed, etc
Fresh fruit - the options are all there - grated, sliced, whizzed in a blender, chopped or however you want
Cooked fruit - use your imagination
Spices - ginger, nutmeg, cinnamon, all spice, mixed spice and even cardamon, turmeric, carraway, cumin, etc
Cook it in dairy or fake dairy

The options are many and varied

Do you need porridge with these recipes? They sound better without it.

Pams porridge oats, soaked overnight with cinnamon and a pinch of salt, cold water to moisten,half a small chopped banana and natural unsweetened yoghurt to loosen the mix. I add frozen blueberries. In winter you can give it a quick burst in the microwave to warm it up if you like.

I make it with water (my preference) and a pinch of celtic sea salt, adding a spoonful of LSA, oat bran and wheatgerm. Mix together and MW for two minutes. Sometimes I add either chopped dates and walnuts or chopped apricots/apples/sultanas and sliced almonds. Usually topped with cinnamon and a little soy cream or greek yoghurt. In Summer I often make a Bircher type muesli and top with fruit and greek yoghurt.

For two people: 1 cup rolled oats, l Tbsp of pumpkin seeds and sunflower seeds; 2 Tbsp almonds or hazelnuts (chopped roughly), 2 or 3 dried apricots (chopped), small handful of cranberries or frozen blueberries. Add 2 cups milk to mixture and stir, then leave overnight in the fridge to absorb. Heat to a simmer and stir constantly till cooked.

The chunky kind is better for you as it digests slower so it does not spike your sugar levels. Yes it is a lot of liquid but I cook it for a long time and it get absorbed by the oats which makes it nice and soft with a bit of bite. When I do overnight oats I use much less liquid.

The chunky steel cut oats? I don't like them because they're chewy - just personal preference. I eat plenty of other healthy stuff but I'll stick to my milk oaties for my porridge thanks, and the healthiness of chunky oats is probably outweighed by the vanilla essence or butter that I add anyway.

Chunky oats are rolled oats which are different to steel cut, raw oats. Raw oats are just the grain. Rolled oats are pre-cooked by steaming then rolled flat and cut, or not, depending on if you want chunky or fine. They cannot really be steel cut chunky, only cut.

I freeze blackcurrants from my bushes then add a few to my quick oats /water mix in a bowl and put in microwave for 2 minutes then add milk and a small spoonful of brown sugar.
