2 | I do kumara, pumpkin and parsnip in the air fryer and I would do the same with potatoes if I did them in there as well. I cut the veges up a little smaller than I would for the oven. Pop it all in a bowl and add a little oil and seasonings, toss. Tip into air fryer and cook at 160 for 25 mins (I always shake the basket around 1/2 way through). Increase heat to 180 and cook a further 7 minutes, shake veges, cook a further 7 minutes at same temp. They should be cooked through at this point.
