A SELF SAUCING DATE PUDDING USING COLD TEA?

#Post
1

Does anyone have this pudding recipe dating back to the 1990's and I think it was in an Australian cookbook. A batter which included cold tea and chopped dates and then a sauce poured over it before cooking with cold tea and sugar? Just hoping that someone might still have the recipe?

Can't find one with cold tea, but this one uses hot, and looks quite good.

Self-Saucing Date Pudding
0:15 Prep 0:50 Cook 6 Servings

Quick and easy pudding with no creaming of butter and sugar. This can be made in the bowl it is cooked in.

Ingredients
225 g dates chopped
1 tsp lemon rind
30 g butter
2 cup tea (brewed - liquid) fresh
1 egg
1 1/4 cup self-raising flour
1/2 tsp mixed spice
1 cup brown sugar

Method:
Preheat oven to 180C. Place chopped dates into a casserole dish or 20 cm pudding bowl. Add lemon rind and chopped butter. Add half the hot strained tea and stir until butter has melted. Stand 5 minutes.

Add egg, sifted flour, spice and half the sugar and mix well, scraping down from sides. Sprinkle extra brown sugar over the top and pour over extra hot black tea. Bake 40-50 minutes.

One of the comments suggests using less br sugar, but most say it was quick and easy. Another comment suggest cooking for only 30 mins and left a lovely caramel sauce....
