Ben given a huge bunch of home grown bananas

Please, ideas what to do with them as they are bound to all ripen at once.

- Freeze some, when well-ripened, in groups of three for making cakes.
- Fry bacon and bananas to go with brunch pancakes
- make banana ice cream
- look for chutney recipes with banana in them (they can be very flavourful)
- swap some with neighbours for lemons, etc?

Maybe chutney. Nothing sweet as don't eat cakes etc. And sadly no one in my area grows fruit to swap so no luck there. I wondered about lan banana pancakes without sugar, something to have with bacon for breakfast? Would they freeze?

Pancakes generally freeze very well, but use ziplock bags and a vacuum pump for best results. You could also do the same thing with waffles, if you have a waffle iron.

I'll look out my chutney recipe for you.

Banana Chutney
From an Aussie friend. Like most chutneys with banana, this chutney tastes so much better than it looks. Serve on cheese and crackers, also with hot or cold roast meats and sandwiches. Takes you back to grandma’s chutney, wonderful flavours

Ingredients
1 kg banana chopped
500 g dates chopped
1 teaspoons fresh ginger grated
1 onion chopped medium
2 teaspoons lemon rind grated
1/4 cup lemon juice
2 cup brown vinegar
1 cup brown sugar firmly packed
2 teaspoons curry powder

Method
1. Combine bananas, dates, ginger, onion, rind, juice and vinegar in a large saucepan.
2. Bring to the boil, simmer, uncovered, for approximately 20 minutes or until fruit is soft.
3. Stir in sugar and curry powder, stir over heat, without boiling, until sugar has dissolved.
4. Bring to the boil, simmer, uncovered, stirring occasionally, for approximately 20 minutes or until mixture is thick.
5. Pour into hot sterilised jars. Seal when cool. Store in a cool dark cupboard. Leave for 5 weeks or more to let flavours develop.

Gluten Free Banana Chutney (Based on a Digby Law recipe)
5 medium onions
8 ripe bananas
1 1/2 cup chopped dates, de-stoned (can use sultanas or raisin instead)
1 1/2 cups white vinegar
1 teaspoon salt
1 teaspoon curry powder
1/2 cup sugar
2 cups water
Method:
Finely chop the onions, mash the bananas and place in a large heavy-bottomed saucepan with the dates and vinegar. Simmer for around 20 minutes, stirring regularly.
Add remaining ingredients and simmer gently, stirring often so it doesn’t stick on the bottom, for around an hour until the chutney is thick. Spoon into sterilised jars and seal. Makes around 1.5 litres.

The chutney sounds amazing but must be very sweet with bananas, dates and sugar? Maybe try it with a lot less sugar and taste first. Thanks lots for the tips.

Sugar helps with the preserving of the chutney, so don't take out too much - the vinegar and spices make it savoury. The second recipe is particularly good with cheese.

Or be clever and keep the first yellow ones in the kitchen and the green ones in the fridge. Then take the next lot out in a weeks time to ripen ... and so on.

I often have a few hundreds of bananas at a time and they keep very well if cooled down. This time of year the just stay outside - covered so the wax eyes do not get into them.

What a difference between homegrown and bought. The bananas have all gone. They ripened but didn't go to brown mush like shop ones. Just eaten the last and were still firm.
