Simple recipes preferred for elderly gentleman who needs to watch his sugar intake.

If biscuits are wanted, there are probably other recipes needed.

Here are a couple of books for sugar substitutes (but you should also check the articles on the dangers of sugar substitutes), Stevia is a natural product. The biggest problem is the making up of the bulk that sugar supplies.

I just halve the sugar in cake and biscuit recipes the only time it's really noticeable is if the biscuit has cocoa powder in it.
You can substitute with date syrup or apple sauce and there is another one but can't remember what its called. These are nicer than using the likes of Stevia.

I agree about using less sugar in recipes and using coconut sugar is better than other sugars. I cut back on the amount of sugar in recipes years ago without any adverse effects and only use coconut sugar now, JMO.

Keto Shortbread makes 24 biscuits.

2 cups Almond flour [almond meal works]
1/3 cup sweetener of your choice, [not liquid]
1 teaspoon of vanilla
100 grams of soft butter
1 egg
pinch of salt.
mix it all together without melting the butter

roll into small balls
flatten with fingers
Bake at 180 deg C for 15 to 20 minutes.
They should be brownish on the edges.

You can also buy sugarless shortbread in the supermarkets.
