Are your onions sprouting...or you just hate having to stop and chop a little onion for a toasted sandwich?..... Chop heaps, flat pack in 3 clip-top sandwich bags and lay in a 2L sistema container (to stop the smell) in the freezer :-) There is no need to blanch them.

OK, might give it a whirl. Not sure if you mean the onion itself, or the sprouting tops?

I chop heaps, saute them in butter/oil with bacon, cool then freeze flat in snaplock bags. Two major tasks (chopping and sauteing) done and can be added to soups, stews, quiches etc - anywhere that needs that extra flavour.

I'm with you, OP - anything to do a big job in one go, and freeze ready for use.... and, with sprouting ones, to save waste

I saw bags of onions in the freezer at the mad butcher today.
I didnt look closely at them, so not sure if they were chopped or rings.
Thought a pretty good idea, if having a crowd for a BBqu

Moore Wilsons sell big bags of chopped onions. Product of China so I prefer to do my own. Such a good idea. You Just need to keep remembering to shake them a few times during the freezing process so they remain free flow.

I do that with leeks, when I have a glut.
