This is nice, and a good way to use up veges. I used broccoli, silver beet and a couple of leeks for my greens

rainrain, that looks like an Alison Holst recipe - is it? I must remember to try it when I have bits and pieces of some greens that need using, and in this chilly weather what better way than in a soup, so thanks for the reminder about it. :-))

Haven't found a place to put this, but it's also GREEN, and utilises the broccoli that's so cheap right now. I made a pot (quite large) of this recipe..... and it is VERY good..... smooth and creamy, but needs more seasoning than stated, and next time I'll be adding some blue cheese too....
A Countdown recipe.... with lots and lots of lovely vitamins....

Broccoli and Potato Soup
15 minutes + 15 minutes Serves 4

Ingredients
• 40g butter
• 1 onion, sliced
• 3 potatoes, peeled, chopped
• 1.5L vegetable stock
• 1 bay leaf
• 1 head of broccoli, roughly chopped
• 1 1/2 cups frozen peas
• Salt, to taste
• Pepper, to taste
• 2 Tablespoons cream
• 2 Tablespoons roasted almonds, chopped
• Chopped Italian parsley, to serve
• Crusty bread, to serve
Method
1. Heat a large saucepan on medium and melt the butter. Add onion and sauté for 4-5 minutes, until tender
2. Add potatoes, stock and bay leaf. Turn up the heat and boil. Boil for 5 minutes
3. Reduce heat to medium. Add broccoli and simmer, covered, for 2 minutes. Stir in peas and simmer for another minute.
4. Transfer to a large heatproof bowl and discard the bay leaf. Using a blender, purée ingredients until smooth. Season to taste.
5. To serve, ladle into bowls. Drizzle with cream, then top with almonds and parsley. Serve with crusty bread

Good spotting, yes it is one of hers, I've had the recipe for a long time and only just made it recently

Did you use stinging nettle? ha ha ;o)

Likewise rainrain - I have had the book that I think recipe is in for many years but never used that particular recipe which, from memory, is either on the same page or close to recipes for Carrot and Orange Soup and Corn Chowder, both of which I have made numerous times. Thanks again for the heads up - after all these years I must give it a try too. :-))
